Chicken fillet on skewers in the oven

    Preparation of products. First defrost the chicken. I used one thigh, from which I skinned. The berries need to be washed. We clean the onion and dip it in water for comfortable cutting. Grind peppercorns and coriander seeds in a mortar.

    Cut the chicken fillet into convenient pieces; mine were closer to squares in shape. In a deep bowl, mix them with sugar, turmeric, paprika, grated coriander and pepper, add vegetable oil. Salt is not involved in the marinade, as it will make the fillet tougher. Let the meat soak for half an hour.

    We soak the skewers in a deep bowl, while the fillet is pickled. Then the ends of the woods will remain light after frying, will be more presentable. We soak the dried cherries separately, so that it is not tough after frying.

    Divide the onion into layers, choosing thicker ones. Cut into squares shaped like chicken fillet pieces. Check with a skewer to make sure the margins are not too narrow.

    We begin to thread a square of onion onto the skewers from below, then a cherry. The third in order is a piece of chicken fillet, which we first roll in sesame seeds. We repeat the combination of onions, cherries and chicken. It turns out five times, the last one will be another square of onion.

    I placed the finished skewers on a wire rack and placed them on the central level in the oven. Below the level was a baking tray with water. If there is no lattice, you can use any suitable shape. You also need to pour water into the bottom of this container. Roast in the oven. My kebabs took twenty minutes (200 gr.).

    Take the browned, aromatic kebabs out of the oven. Serve well with any greens. For salty lovers, I use soy sauce. Fresh celery and fennel or dill go well with chicken skewers. In my opinion it turned out to be a beautiful composition. The cherries were steamed to taste and perfectly complemented the spiced chicken, and the onion squares were baked but not burnt.
