STEP 1

How to make chicken cutlets with mushrooms and cheese in a frying pan? Prepare the necessary ingredients. You can take ready-made minced meat, but it is better to cook it yourself, so you will be sure of its quality.
STEP 2

Wash the champignons and dry them with paper towels to remove excess moisture. Cut the mushrooms into small cubes or thin slices.
STEP 3

Peel the onions and rinse in cold water. Cut into small cubes.
STEP 4

Grate the hard cheese onto a coarse grater.
STEP 5

Heat vegetable oil in a frying pan over medium heat. I used olive oil, but you can use refined vegetable oil. Place the chopped onion in a preheated frying pan and fry, stirring, for 3-4 minutes. Add the mushrooms and continue to cook until tender, stirring, about 5 minutes more. Remove from heat. Transfer the mushroom filling into a container.
STEP 6

Mix fried mushrooms and onions with grated cheese. I also added chopped fresh dill, but this is optional. Mix the filling well.
STEP 7

Season the minced meat with salt and pepper to taste. Mix well with a spoon.
STEP 8

Now you can start forming the cutlets. Wet your hands with cold water. Take a piece of minced meat and place it on your palm in the form of a pancake. Place about 1 tablespoon of filling in the center.
STEP 9

Seal the edges and form oblong patties.
STEP 10

Roll the pieces on all sides in breadcrumbs.
STEP 11

Pour vegetable oil into a frying pan and heat it up. Place the cutlets and fry over low heat on one side until golden brown, about 7-10 minutes.
STEP 12

Turn the cutlets over to the other side and fry for another 7-10 minutes.
STEP 13

Serve the finished cutlets immediately, before they have cooled down, with any side dish, fresh or pickled vegetables.
