Chicken and pasta soup
Step-by-step preparation
STEP 1
How to cook chicken and pasta soup? Prepare all the necessary ingredients. Peel the vegetables and rinse under running water to remove dirt. If you want a lighter version of the soup, use breast meat. And thighs or legs are perfect for rich broth. Pasta can be replaced with noodles, rice or lentils.
STEP 2
Pour cold water over the chicken, bring to a boil and simmer for 30 minutes. When boiling, foam will form, which must be skimmed off. Then remove the chicken and separate the meat from the bones. Strain the broth through a fine sieve. Return the meat to the strained broth and bring everything to a boil again. Cut the potatoes into small pieces and add to the pan. Cook everything together for 10 minutes.
STEP 3
While the potatoes are cooking, prepare the roast. To do this, finely chop the onion and grate the carrots using a fine or medium grater.
STEP 4
Pour a little vegetable oil into a hot frying pan and add chopped onions and carrots. Fry everything together for 3-4 minutes. Remember to stir occasionally to prevent the vegetables from burning. Burnt frying can ruin the taste of the entire soup.
STEP 5
Place the finished roast in a saucepan with soup. Next add the pasta. Add a little salt and spices and ground black pepper to the soup to taste. But it is better not to add bay leaves to chicken soup, as it interrupts the main flavor of the chicken. Stir and cook everything together for about 10 minutes. Then remove the pan from the heat and pour the finished soup into prepared plates.
STEP 6
If desired, the soup can be sprinkled with fresh herbs before serving.
