    Rinse the chia seeds thoroughly and place in a fine sieve. At least that's what it said on the packaging. Since this was my first time working with chia, I did everything according to the instructions. As a result, the seeds swelled greatly and became slippery.

    Wash lemons with baking soda or food grade detergent. Remove the zest from the lemon using a medium peel, try to remove only the yellow part without the white layer, otherwise the finished dessert will be bitter. This way the zest will better reveal its aroma. Later, the mixture will need to be strained through a sieve and all the zest will remain in it.

    Cut the lemons in half.

    Squeeze the juice out of them using your preferred method. Make sure that the seeds do not get into the resulting juice.

    In a blender bowl, combine coconut milk, honey, lemon juice, zest, turmeric and salt. Don't let the presence of turmeric confuse you. It gives the dessert a yellowish color and a slight taste, and salt will make the taste more balanced.

    Beat everything until smooth. After beating, strain the mixture through a sieve to remove the zest. But if you are comfortable with zest in desserts, then it is not necessary to strain the mixture. It still makes it more flavorful.

By the second week of fasting, my thoughts about desserts had already become obsessive)) My own imagination was not enough to come up with something interesting. And here is this fabulous recipe for chia pudding with coconut milk! My delight knows no bounds, how good it is! I made some adjustments based on my own taste - I took only one lemon, added two more tablespoons of sugar in addition to honey (and despite this, the dessert seemed moderately sweet to me 😁). But most importantly, I added two tablespoons of coconut flakes, which made the coconut taste of the pudding bright and expressive. I didn’t wash the chia seeds, I added them dry, and I didn’t strain the lemon zest. The prepared mixture, whipped with a blender, was poured into jars and bowls, resulting in exactly four servings. It took a long time to insist; it’s not for nothing that the author advises leaving the pudding overnight. Although chia seeds release a gel quickly, the pudding itself stabilizes slowly and gradually. And the result is simply divine... The mint and berries in my photo are only for decoration, as for me, they only interrupt the taste. But vanilla on the tip of a knife, or tiny pieces of shortbread cookies, or chopped almonds - I like these fillings, I’ll definitely try to add some of them next time.
