STEP 1
How to make chia pudding with coconut milk? Very simple! Prepare all the necessary ingredients.
STEP 2
Rinse the chia seeds thoroughly and place in a fine sieve. At least that's what it said on the packaging. Since this was my first time working with chia, I did everything according to the instructions. As a result, the seeds swelled greatly and became slippery.
STEP 3
Wash lemons with baking soda or food grade detergent. Remove the zest from the lemon using a medium peel, try to remove only the yellow part without the white layer, otherwise the finished dessert will be bitter. This way the zest will better reveal its aroma. Later, the mixture will need to be strained through a sieve and all the zest will remain in it.
STEP 4
Cut the lemons in half.
STEP 5
Squeeze the juice out of them using your preferred method. Make sure that the seeds do not get into the resulting juice.
STEP 6
In a blender bowl, combine coconut milk, honey, lemon juice, zest, turmeric and salt. Don't let the presence of turmeric confuse you. It gives the dessert a yellowish color and a slight taste, and salt will make the taste more balanced.
STEP 7
Beat everything until smooth. After beating, strain the mixture through a sieve to remove the zest. But if you are comfortable with zest in desserts, then it is not necessary to strain the mixture. It still makes it more flavorful.
STEP 8
Return the strained mixture to the blender bowl. Add chia seeds.
STEP 9
Beat everything again for 4-5 seconds.
STEP 10
Pour the dessert into bowls and put it in the refrigerator overnight.
STEP 11
As the dessert cools, it will become more viscous. Before serving, remove the chia seed pudding from the refrigerator and let it sit at room temperature for 15-20 minutes. Bon appetit!
