Cheesecakes with prunes in the oven

Prunes are an ideal filling for cheesecakes. I'm not a big fan of dried fruits. I most often use them in salads or baked goods. However, the other day I came across an interesting recipe for cheesecakes, which are first fried and then baked. In combination with prunes, the cheesecakes turned out incredibly tasty.

    Pour boiling water over the prunes and leave for 8-10 minutes. Then drain the water. If the prunes have pits, remove them.

    Mash the cottage cheese with a fork or rub through a sieve.

    Add eggs, sugar, vanilla sugar and salt to the cottage cheese. Mix everything thoroughly.

    In a separate container, mix semolina and baking powder.

    Cut the prunes into small pieces.

    Breading. For breading you will need flour. I used wheat, but rice is better. It will make the cheesecakes softer.

    Form small cheesecakes from the resulting mass and roll them in flour.

    Heat vegetable oil in a frying pan and fry the cheesecakes over high heat on both sides until golden brown. It is better to turn the cheesecakes over with two spatulas or a spatula and a fork, since the consistency of the dough is quite soft. Therefore, in order for the cheesecakes to retain their even round shape, it is better to turn them over, holding them with a second device.

    Then transfer the cheesecakes to a baking sheet lined with parchment and cook in an oven preheated to 200°C for about 6 minutes.
