  1. STEP 1

    STEP 1

How to make fluffy cheesecakes from cottage cheese without flour? Prepare all the necessary products. Remove the cottage cheese and egg from the refrigerator in advance; it is better if the products are at room temperature.

  2. STEP 2

    STEP 2

Cottage cheese for cheesecakes can be used at any fat content; the recipe used a product with 18% fat content. If the cottage cheese is coarse-grained, then rub it through a sieve, or punch it with a blender.

  3. STEP 3

    STEP 3

Add one egg and sugar to the cottage cheese. If you like your cheesecakes sweeter, you can increase the amount of sugar to taste. Mix everything until smooth.

  4. STEP 4

    STEP 4

Add vanilla sugar and semolina, mix thoroughly. See if your mixture is too liquid. The cottage cheese should not spread over the plate. Leave the curd mixture to sit for 15-20 minutes. Keep in mind that the semolina will swell slightly and absorb moisture.

  5. STEP 5

    STEP 5

Prepare the breading. To do this, sift the flour and mix with starch. If you don't want to use wheat flour, replace it with fine semolina, breadcrumbs, or don't bread at all.

  6. STEP 6

    STEP 6

Place the curd mixture on the table with flour.

  7. STEP 7

    STEP 7

Roll in flour on all sides and form into a sausage.

  8. STEP 8

    STEP 8

Using a sharp thin knife, cut the sausage into medallions, as in the photo. Make the medallions at least two centimeters wide.

  9. STEP 9

    STEP 9

Using both hands, form even edges, patting the top and bottom to create even cones.

  10. STEP 10

    STEP 10

Heat vegetable oil in a thick-bottomed frying pan. Send the cheesecakes to fry, reduce the heat to moderate. Cook until deliciously golden brown, about 7-10 minutes.

  11. STEP 11

    STEP 11

Carefully turn the cheesecakes over with a spatula and fry until cooked on the other side.

  12. STEP 12

    STEP 12

Ready-made cheesecakes can be placed on thin paper napkins to remove excess oil, or served directly from the pan.

  13. STEP 13

    STEP 13

Sprinkle the treat with powdered sugar and garnish with fresh berries if desired.

  14. STEP 14

    STEP 14

Very soft, tender and delicious cheesecakes are ready!

I always cook cheesecakes without flour with the addition of semolina (in slightly different proportions of ingredients). Therefore, the recipe for cottage cheese pancakes without flour is not new to me. But that doesn't make it any less tasty. The only thing I haven’t done before is add starch when breading. There was a lot of dough, so I divided it into two parts and rolled two sausages. I fried the cheesecakes for eight minutes on each side. I've heard the opinion that cheesecakes with semolina turn out too dense and rubbery. But this is absolutely not true. These cheesecakes are very tender, soft and tasty. I recommend making cheesecakes using this recipe.

Thanks for the recipe. It’s very tasty and, most importantly, quick to prepare, which is important when you’re short on time. The kids liked it.

Yes, a great idea, when there is no flour, you can replace it with semolina.

This was the first time I made these cheesecakes using semolina, and I was very worried about the result - I was afraid that they would fall apart - after all, there was no flour! However, how surprised and delighted I was when I got such cute little cheesecakes and WITHOUT FLOUR. Thank you very much for the recipe! Here is a photo report -->>
