    Pour in the sifted flour, add baking powder and salt and beat again until smooth.

    You will get a viscous homogeneous dough. It should be the same consistency as charlotte or a little denser.

    Pour the dough into a greased mold. To make it more convenient to remove the finished cheesecake, it is better to use a springform pan. Since I have a deep silicone mold, I make parchment blanks with handles, by pulling which you can remove the cake from the mold.

    Prepare the necessary ingredients for the filling. It is better to take the cottage cheese slightly moist, not lumpy. Cottage cheese in briquettes is ideal - it is quite soft, moderately moist, without grains. If your cottage cheese is dry and lumpy, beat it with an immersion blender or rub through a sieve.

    Wash the cherries, dry them, remove the pits. Drain off the released juice. You can take either fresh summer cherries or frozen ones. If the cherries are frozen, defrost them first and place the berries on a napkin.

    Combine cottage cheese with eggs, sugar, semolina and vanilla sugar.

    Beat everything with a mixer until smooth. The consistency of the filling should be viscous but fluid.

    Pour the curd filling inside the dough. You need to pour the curd filling little by little with a tablespoon exactly into the center. If you pour the dough directly from the bowl, the dough and filling will not have time to distribute correctly and will mix. And if you add the curd filling with a tablespoon and slowly, the filling will gradually spread inside the dough in an even layer. The less curd filling, the wider the strip of dough will be and vice versa - the more filling, the thinner the layer of dough.

    Place cherries on the cottage cheese. The berries should be placed only on the curd filling, there is no need to touch the dough and crumple the layers. Place the mold with the cheesecake in an oven preheated to 180°C for 40-45 minutes.

I ran out of cherries))) I made it with currants. The taste as a whole is unreal. It turned out to be a very fluffy cheesecake. I beat it in a dough mixer and a blender... maybe that's why the mass came out airy. I have long wanted to make two cheesecakes according to Maria’s recipe, this one and a chocolate one. I had a lot of good homemade cottage cheese, and I finally made it! I made the dough according to the recipe, using frozen cherries. I reduced the amount of cottage cheese filling by 20 percent, using a handy calculator, because I was afraid that the cheesecake would not fit into my mold. It's not difficult to prepare. I baked it in the oven for over an hour, but the middle was still not cooked through. It turned out to be a very tasty cheesecake! Soft, good dough and a fragrant curd center with a pleasant cherry sourness. Great recipe, I will make it again and again. Maria, thank you so much for another simple and delicious recipe!
