Cheeseburger Pie

STEP 1
Prepare your ingredients. For the dough, use premium flour, C1 category egg, and fast-acting dry yeast. For the filling, use ground beef, as in a real cheeseburger, but if desired, you can replace it with pork. Hard cheese is used: Russian, Poshekhonsky and similar types of cheese. Do not use Parmesan, Grana Padano and cheeses that have a very strong unusual taste, they will not be appropriate. White sesame seeds are used for sprinkling.
STEP 2
Heat the milk until warm (approximately 30°C) and pour into a mixing bowl. To activate the yeast, the milk must be warm, but not hot, otherwise the yeast will die. Next, pour dry instant yeast and sugar into a bowl, and, stirring, dissolve the bulk ingredients in warm milk. Please note that there should be no grains or lumps left in the milk. Set the bowl aside for 10-15 minutes to ferment.
STEP 3
After the time has passed, beat a chicken egg into a bowl, add salt and pour in odorless vegetable oil, which will give the dough elasticity. Whisk the contents of the bowl.
STEP 4
Sift the flour through a sieve. Due to this, the flour will be filled with oxygen, which will make the dough more tender and soft, and will also remove unnecessary impurities that may be in the flour. Start adding the sifted flour into the milk-egg mixture in parts.
STEP 5
First, knead the dough with a spoon in a bowl, and when the mass thickens and comes together, use your hands on the work table for 7 minutes, adding flour. But don't overfill the dough with flour. The dough should become soft and not stick to your hands. Depending on the quality and grinding of the flour, you may need a little less or a little more flour than indicated in the recipe. Gather the dough into a ball, return to the bowl, cover with a clean towel and place in a warm, draft-free place for 40-60 minutes.
STEP 6
Place the minced meat in a heated frying pan and, breaking up any lumps, fry the meat in vegetable oil until all the liquid has completely evaporated. Then set the stove to the highest heat and fry the minced meat for 1-2 minutes, stirring it all the time. While frying, salt and pepper the meat filling. When the filling is ready, remove the pan from the stove and set aside to cool.
STEP 7
Peel the onion, rinse under water and cut into small cubes. Pour boiling water over the onion cubes to remove the bitterness. Drain in a colander and let all the liquid drain. By cooking the onions this way, the finished pie will have a crunchy quality, just like a cheeseburger. If you prefer softer onions, you can fry them in a frying pan until soft.
STEP 8
During this time the dough should have risen. Punch down the rested dough and divide it into 2 parts in the following proportion: 1/4 and 3/4. Take the larger portion and roll it out into a large circle. Carefully transfer the dough into a pan greased with vegetable oil, forming the bottom and sides of the future pie. For this pies you need a small mold with a diameter of 20 cm.
STEP 9
Place the cooled minced meat in the first layer and smooth it out. Lubricate the meat filling with a layer of ketchup. Next, lay out the prepared onions, distributing them evenly throughout the pie.
STEP 10
Cut the pickled cucumbers into circles and place them across the entire diameter of the pie in one layer.
STEP 11
Coarsely grate the cheese and distribute evenly over the entire diameter. There is no need to grate the cheese finely, since at high temperatures in the oven it will melt in any case, regardless of the fine or coarse grater you choose.
STEP 12
Roll out a smaller part of the dough into a circle, cover the pie with it and, turning the sides, fasten the joints. Using a pastry brush, brush the top of the pie with milk and sprinkle with sesame seeds. Using a fork, poke several holes in the pie. Bake the pie in a preheated oven at 180°C for 30-40 minutes. Baking duration and temperature may vary depending on the temperature and design of the oven.
