Chebureks with minced meat in the oven

Ingredients
Step-by-step preparation
STEP 1

How to make pasties with minced meat in the oven? Start cooking by kneading the dough. Prepare food for him. Sift the flour first - this will not only remove possible debris, but also saturate it with oxygen, which will make the dough more airy.
STEP 2

How to make the dough? Heat the water to 60°C - it should become noticeably hot. Pour it into a deep bowl. Beat the egg with a fork in a small bowl. Be sure to wash your eggs before using them, as even seemingly clean shells can harbor harmful bacteria. It is best to use food grade detergents and a brush. Pour the egg into the water. Add salt. Stir.
STEP 3

Add baking powder to flour. Stir.
STEP 4

Begin pouring the flour into the water and egg in portions, stirring with a fork after each addition. First knead the dough with a fork, when it becomes thick, continue kneading with your hands.
STEP 5

Be prepared that you may need more or less flour than indicated in the recipe. Focus not on the amount of flour, but on the desired consistency of the dough. It should become homogeneous and stop sticking to your hands, but remain soft. Cover the dough with film and leave to rest for 10 minutes. During this time, the flour will finally absorb all the liquid, gluten will develop in it, which is responsible for the elasticity of the dough - it will be easier to work with.
STEP 6

While the dough is resting, prepare the filling. Prepare food for her. Minced meat for chebureks can be made from any meat; for me it’s veal. You can buy a store-bought one or make it at home yourself. You can take more onions, to taste.
STEP 7

Peel and chop the onion in any way, I grated it. Add the onion to the minced meat, add salt and spices to taste. I took ground black pepper. Pour in a little cold water - it will make the filling juicier. Knead the minced meat well. It should turn out runny. The filling is ready.
STEP 8

Roll the rested dough into a sausage on the work table. Cut it into equal parts. (I first divided all the dough in half, and then each half into 4 parts - I got 8 chebureks). Roll each part into a thin round cake.
STEP 9

Place the minced meat on one half of the workpiece and spread it into a thin layer. Leave a centimeter of free space at the edge.
STEP 10

Cover the filling with the other half of the dough. Pinch the edge of the cheburek with a fork. Make chebureks from the whole dough in the same way.
STEP 11

Place them on a baking tray lined with baking paper. I got 3 chebureks, baked the rest the next time. Beat the egg with a fork and brush the top of the pasties with it. You can sprinkle them with sesame seeds, I already made the rest with sesame seeds.
STEP 12

Bake the pasties in the oven, preheated to 180°C, for 15-20 minutes, until golden brown.
STEP 13

Remove the finished chebureks from the oven and serve immediately. Bon appetit!
