Chebureks from zucchini with minced meat

STEP 1
How to make chebureki from zucchini with minced meat? Prepare the necessary products according to the list. Wash the zucchini thoroughly with a brush. If the zucchini is young with delicate skin and small grains, then there is no need to peel it. If the zucchini is large, overripe, with a tough, hard skin and large seeds, then it needs to be peeled from both the skin and the seeds. I had a young zucchini.
STEP 2
Grate the zucchini on a medium grater. You can use a coarse one, but for a more delicate consistency of pancakes, it is better to use a medium grater. Salt the zucchini, stir and leave for 5 minutes to release the juice. Then squeeze out excess moisture.
STEP 3
Wash the dill, shake off moisture and chop finely. If you wish, you can replace or supplement with other herbs, for example, parsley, cilantro, green onions, or use a mixture of different herbs.
STEP 4
In a bowl, combine zucchini, dill and pressed garlic cloves.
STEP 5
Separately, combine the eggs and milk and whisk until smooth.
STEP 6
Pour the milk-egg mixture into the zucchini and stir.
STEP 7
Pour vegetable oil into the dough, add flour. Mix everything thoroughly until smooth. The zucchini dough is ready.
STEP 8
Now prepare the filling. I used minced pork and beef, but you can use any minced meat - separately from pork, beef, chicken or mixed.
STEP 9
Cut the onion into small cubes.
STEP 10
Heat vegetable oil in a frying pan over medium heat. Add the onion and fry for a couple of minutes until translucent.
STEP 11
Add the minced meat and fry, breaking up any lumps, for 6-8 minutes.
STEP 12
At the end, add salt and pepper to the filling. Transfer the minced meat to a plate.
STEP 13
Heat a little vegetable oil in a frying pan. Pour in some of the zucchini batter and form into a round pancake. Fry it for a couple of minutes on one side.
STEP 14
Place some minced meat on one half of the pancake.
STEP 15
Cover with the other half of the pancake, giving it a pasty shape. Press the edges of the pancake lightly so that they stick to each other. Fry the pancakes on both sides for 4-5 minutes until golden brown. The number of pasties depends on the diameter of your frying pan. The smaller the diameter, the more pasties you will get.
STEP 16
Transfer the finished zucchini pasties with minced meat to a plate and serve. Bon appetit!
