If the zucchini is young with delicate skin and small grains, then there is no need to peel it. If the zucchini is large, overripe, with a tough, hard skin and large seeds, then it needs to be peeled from both the skin and the seeds. I had a young zucchini.

    Grate the zucchini on a medium grater. You can use a coarse one, but for a more delicate consistency of pancakes, it is better to use a medium grater. Salt the zucchini, stir and leave for 5 minutes to release the juice. Then squeeze out excess moisture.

    Wash the dill, shake off moisture and chop finely. If you wish, you can replace or supplement with other herbs, for example, parsley, cilantro, green onions, or use a mixture of different herbs.

    At the end, add salt and pepper to the filling. Transfer the minced meat to a plate.

The recipe for zucchini chebureks with minced meat interested me primarily because of its originality. I would never have thought that pasties could be made from zucchini. But, as they say, live and learn. I fried the chebureks in a small frying pan with a diameter of 15 cm. I got eight pieces. My first two chebureks did not turn out very beautiful. The first one tore in the middle when I folded the zucchini pancake in half. Apparently, I didn’t bake it to the desired condition. The second cheburek didn’t work out because I overcooked the pancake

How adorable are these pasties!!! A tender, juicy vegetable dish with minced meat... An original version of preparing a zucchini pancake with minced meat inside! Super!!! I'll definitely try to make it like this. But I’ll try the second option for preparing the filling too, it seems to me that it won’t crumble so much if you put boiled meat with raw onions through a meat grinder, and in general, I would put everything through a meat grinder without grating, well, I like it so much. Zucchini chebureks with minced meat are simply the best solution for me in the summer season! Everyone is already tired of stewed zucchini, and I don’t really want to eat pasties in the heat, even though our family loves them. And these lighter pasties are just a godsend. Thanks to the author!
