    Break the eggs into a bowl and beat with a mixer. Begin beating at medium speed, gradually adding sugar. I advise you not to beat them at high speeds, because bubbles of different sizes will form, and during baking, large ones will begin to burst, which is why our charlotte will fall off. Beat the eggs until white and double in volume.

    Add sifted flour and baking soda, which must be quenched with lemon juice. Gently mix the dough with a spatula, it is better to use a silicone one, it will not disturb the structure of the beaten eggs. Do not stir for long, you just need to stir the flour until smooth.     Add chopped apricots to the dough and stir. If you want to arrange the fruit beautifully, then put it straight into the mold; we like it to be evenly distributed throughout the charlotte.

    Grease the mold with butter. Pour the dough into it and place in an oven preheated to 200 degrees, bake for about 30 minutes. I really love charlottes and often cook them with different berries and fruits. But I’ve never baked charlotte with apricots before. I baked the charlotte in a springform round pan with a diameter of 19 cm. I covered the bottom with siliconized parchment. I did not mix the apricots with the dough, but laid them out in two layers on the bottom of the mold. So I ended up with an upside-down pie. I baked the charlotte for 35 minutes at 200 degrees. The charlotte turned out soft and tender. It is moderately sweet with a lot of filling. I really liked the bright taste of apricots in the pie. Thank you very much for the recipe, katushafin!

I’ve never baked charlotte with apricots, but in vain. I liked it very much. The pie is juicy, aromatic, with a pleasant sourness. It looks sunny, with a sugar crust. In addition to apricots, I added peach. I cut it into slices and laid it out in a circle. I served the pie still warm with ice cream. Delight!
