    Be sure to sift the flour to saturate it with oxygen. The splendor of the baked goods depends on this. Since the type and quality of flour is different, its quantity may vary up or down. Just in case, sift more flour than indicated in the recipe. Add baking powder and sifted flour to the egg mixture. Stir. The dough should turn out like thick sour cream. Turn on the oven to 180 degrees in advance and let it warm up.

To prevent the sponge cake from settling, do not open the oven for the first 20 minutes. The baking temperature may need to be reduced or increased, it all depends on your oven.

Charlotte turns out even tastier if you add pieces of butter when preparing it. I prepare it like this: I don’t mix the apples with the dough as in step No. 7, but I grease the baking dish with butter. I put chopped apples on the bottom of the mold, and put small pieces of butter between the apples. Then I fill the apples with the prepared dough and bake. This is what I get.
