Celery okroshka with kefir

A variation on the theme of okroshka with kefir for a hot summer day! I used celery as a herb, which adds extra freshness to our cold soup.

    Peel the potatoes and cut them into small cubes. Let's cook. After boiling, add salt and cook until done. Drain the water and cool.

    Boil eggs and cut them in the same way as potatoes. We do the same with sausage, radishes and cucumbers - add them all indiscriminately. We also cut the celery, which gives a special piquancy to this dish, finely - like an onion. Mix all the ingredients together, not forgetting the potatoes

    Salt to taste, mix well, add a spoonful of sour cream and mix again

    Pour in kefir and mix. Add a liter of mineral water (I like it thicker). Mix everything thoroughly and check for salt. You can add a little vinegar, but this is not for everyone. Next, let’s set our hash to cool!

a good summer dinner. Low in calories, even using sausage. You can replace the onion with green onion and chop it at the very beginning. this way it won’t crunch on your teeth. it will be soft and tender. It’s better to take the sausage for okroshka without fat, but if you like it, you can use it with fat. The radishes can be grated on a fine or coarse grater. It will taste more tender and not so spicy. Pour in kefir and mineral water and you can serve. I prefer chilled. Bon appetit.

The second ingredient in the recipe is vegetables (“I took a bag of frozen Mexican mixture”). So I’m thinking - what does it have to do with okroshka?

Yes, really... I didn’t notice)) Well, this is the author’s desire, I personally only add vegetables to okroshka traditionally: potatoes, cucumbers, radishes, green onions. Well, and greens, of course.
