STEP 1
How to make honey mushrooms for the winter with carrots? First of all, prepare the honey mushrooms. You can collect them yourself in the forest, or buy them in a store. I usually prepare mushrooms collected with my own hands.
STEP 2
So, carefully sort the honey mushrooms, remove all forest debris, pine needles, remaining soil and grass. Cut off the bases of the legs. If you have more mature honey mushrooms, then it is better to remove the loose stem completely. If you have young mushrooms with an elastic thick stem, then leave them as they are.
STEP 3
Wash the mushrooms thoroughly and rinse several times.
STEP 4
Place the mushrooms in a saucepan, cover with cold water and place on the stove. Bring to a boil over high heat. Skim off any white foam that has formed. Reduce the heat and cook the mushrooms for about 30 minutes.
STEP 5
At this time, prepare everything else needed for the recipe.
STEP 6
Peel the carrots and wash. Grate the carrots using a coarse grater or a vegetable slicer for Korean salads.
STEP 7
Heat odorless vegetable oil in a frying pan with a thick bottom and high edges. Send the carrots to fry. Stirring constantly, cook until browned.
STEP 8
Drain the boiled mushrooms in a colander and rinse again under running water.
STEP 9
Add honey mushrooms, salt and sugar to the pan. Also add tomato paste and bay leaf to the mushrooms. Pour in a glass of water, mix everything well and simmer everything together for 20-30 minutes over moderate heat under the lid. Open the lid periodically and stir the mushrooms so that nothing burns.
STEP 10
At the end of cooking, add vinegar. At this stage, you can add your favorite spices. I usually just use ground allspice. If desired, you can add a couple of cloves of finely chopped garlic. Leave on the stove for another five minutes. Taste the mushrooms for salt. If necessary, add salt and sugar to taste.
STEP 11
Sterilize jars and lids in any way convenient for you. Place the prepared honey mushrooms tightly into each jar, press down on top with a spoon so that the vegetable oil comes out on top. Close the jars with lids. Turn the top upside down and wrap it in a warm blanket.
STEP 12
After cooling completely, remove the workpiece to a cool, dark place. I usually store it in the refrigerator.
STEP 13
Honey mushrooms with carrots are very tasty on their own or in addition to potatoes.
