Cake Wood grouse's nest with sour cream

Delicious, unusual and beautiful cake for the holiday table! A chic cake called “Gercaillie’s Nest” will definitely decorate your holiday table. And it got its name due to its external resemblance to a nest, in the center of which lay the eggs of a capercaillie - white with specks. This cake is quite simple to prepare, but it turns out very tasty and tender, with a pleasant honey note in the dough and a nutty taste. The main thing is to let it soak well in the cream in the refrigerator.

  1. STEP 1

    STEP 1

Let's prepare the ingredients for the dough. The dough is prepared like regular shortbread, but there is no need for resting time; you can immediately proceed to baking. You can use any nuts for the filling: peanuts, almonds, cashews or small pieces of walnuts. Walnuts add a particularly pleasant taste to honey dough.

  2. STEP 2

    STEP 2

Beat two chicken eggs into a bowl, add sugar and beat with a blender until the sugar is completely dissolved and a homogeneous mass is obtained, not until it becomes thick foam.

  3. STEP 3

    STEP 3

Add honey and baking soda slaked with vinegar to the egg mixture, stir well to dissolve the honey if you used thick honey. A foam should appear on the surface of the mixture.

  4. STEP 4

    STEP 4

Add margarine or butter softened at room temperature to the mixture and grind the mass well.

  5. STEP 5

    STEP 5

Add sifted flour in parts and knead into an elastic, smooth dough; it should not stick to your hands.

  6. STEP 6

    STEP 6

We form a long sausage from the dough and cut it into small pieces, about the size of a walnut; several pieces can be made a little smaller than the rest. Roll each piece into a small flat cake about 0.5 cm thick. Place a nut in the center and secure the edges of the dough, forming an even ball.

  7. STEP 7

    STEP 7

We do this with all the dough. Place the dough balls on a greased baking sheet.

  8. STEP 8

    STEP 8

Preheat the oven to 180 degrees. Place the baking sheet with the balls in the oven for literally 15 minutes, but be guided by the operation of your oven. The balls should be browned. Take them out and cool, they should become much larger in size. Meanwhile, prepare the cream.

  9. STEP 9

    STEP 9

We prepare three creams for filling the dough: chocolate, cocoa and sour cream. In a water bath, dissolve a bar of dark chocolate with the addition of milk and butter. Bring the water in a saucepan to a boil and place a bowl in it. Pour milk into a bowl, add chocolate broken into pieces, stir until chocolate melts. Then add a piece of butter and stir until you get a homogeneous, smooth chocolate mass.

  10. STEP 10

    STEP 10

In another bowl, make sour cream. Beat the sour cream with sugar until the sugar is completely dissolved and the mass increases in volume. Prepare the cream with cocoa. In the third bowl, add most of the sour cream and cocoa. Beat well with a blender or stir until the mixture is homogeneous in consistency and color. Let's start assembling the cake. We set aside a few balls for eggs, and make a nest from the rest.

  11. STEP 11

    STEP 11

Dip some of the balls in chocolate cream, some in cocoa cream. Lay out two layers of these balls in a circle, leaving a void in the center for the eggs. If there is any cream left, you can pour it on top of the nest so that it better saturates the dough. Dip the remaining balls in sour cream and place them in the center of the nest. Leave the cake in the refrigerator overnight so that the dough is well soaked in the cream. Serve. Enjoy your tea!
