STEP 1

How to make a cake without butter? Prepare your food. You can use kefir of any fat content. Potato starch will also work, take 2 times less, 10 grams. Take odorless vegetable oil, seedless raisins. All products should be at room temperature, so remove eggs and kefir from the refrigerator in advance. If you did not have time to do this, then dip the eggs in warm water, and dilute the kefir with hot water or heat it up.
STEP 2

Rinse the raisins and pour boiling water for 10 minutes. In this way, you will not only soften the dried fruit, but also remove all the dirt that was not washed off during washing.
STEP 3

Then place the raisins in a sieve and rinse again. Spread the raisins in a single layer on paper towels to dry.
STEP 4

Rinse the lemon thoroughly, preferably with baking soda in warm water. Rub the skin thoroughly with a hard sponge to remove any additives used on the fruit. Finely grate the lemon zest - the upper part of the peel. Do not touch only the white part under the skin, it is bitter.
STEP 5

Then cut the lemon and squeeze the juice out of it. To prevent seeds from getting into it, place a small strainer under the lemon.
STEP 6

Take a bowl and sift the flour into it. This will not only remove possible debris from it, but also saturate it with oxygen, which will make the baked goods more airy. Add starch, baking powder and salt to flour. Salt in sweet baked goods acts as a flavor enhancer, don’t be afraid of it. Mix dry ingredients.
STEP 7

Beat the eggs into another bowl. Be sure to wash your eggs before using them, as even seemingly clean shells can harbor harmful bacteria. It is best to use food grade detergents and a brush. Beat them with sugar until fluffy and light.
STEP 8

Reduce mixer speed to minimum. Pour kefir and vegetable oil into the egg mixture. Stir until smooth.
STEP 9

Combine both masses - dry and liquid ingredients. Mix them at low mixer speed. Add lemon juice and zest, vanillin, stir the dough with a spatula. The dough should have the consistency of liquid sour cream.
STEP 10

Add a little flour to the raisins and stir them around so that each raisin is covered in the flour. Pour the raisins into the dough and mix it with a spatula. In this way, the raisins will be evenly distributed throughout the dough and will not settle to the bottom.
STEP 11

Take any baking dish. Any heat-resistant pan will work for this recipe. If you are using a silicone mold, you do not need to coat it with butter or margarine. But it is better to lightly grease metal, ceramic or glass dishes with vegetable oil so that the baked goods do not burn. Pour the dough into it.
STEP 12

Bake the cake in the oven, preheated to 180°C, for 50-60 minutes. Baking time will depend on the features of your oven and the size of the pan. My cake took 55 minutes to bake. When the top layer of the cake is slightly browned, check it for readiness: pierce it with a wooden skewer in several places; if the skewer comes out dry, then the pan can be removed from the oven.
STEP 13

Cool the finished cake and remove from the mold. You can sprinkle it with powdered sugar. Serve to the table. Bon appetit!
