    Rinse the lemon thoroughly, preferably with baking soda in warm water. Rub the skin thoroughly with a hard sponge to remove any additives used on the fruit. Finely grate the lemon zest - the upper part of the peel. Do not touch only the white part under the skin, it is bitter.

Add starch, baking powder and salt to flour. Salt in sweet baked goods acts as a flavor enhancer, don’t be afraid of it. Mix dry ingredients.

    Add a little flour to the raisins and stir them around so that each raisin is covered in the flour. Pour the raisins into the dough and mix it with a spatula. In this way, the raisins will be evenly distributed throughout the dough and will not settle to the bottom.

    Take any baking dish. Any heat-resistant pan will work for this recipe. If you are using a silicone mold, you do not need to coat it with butter or margarine. But it is better to lightly grease metal, ceramic or glass dishes with vegetable oil so that the baked goods do not burn. Pour the dough into it.

    Bake the cake in the oven, preheated to 180°C, for 50-60 minutes. Baking time will depend on the features of your oven and the size of the pan. My cake took 55 minutes to bake. When the top layer of the cake is slightly browned, check it for readiness: pierce it with a wooden skewer in several places; if the skewer comes out dry, then the pan can be removed from the oven.

Interesting recipe, I have never baked a cake without butter and starch. I decided to try it and did not regret it. I used potato starch, I followed the advice of katushafin and took a little less than a tablespoon. Thanks to the starch, the cake has such a crumbly structure. I would say that this cake is like a cloud, easy to prepare, and the structure is airy. I didn't have raisins, but I did have some dry mix to make a chocolate drink. That's why I ended up with such a dark color. And of course the lemon did its fragrant job. To summarize, I will say that the experiment was a success, the main thing is not to be afraid to try something new, to be able to move away from stereotypes and everything will work out!

I love baking cupcakes, I love mixing this creamy dough, when it bakes it gets a crack in the middle and then it tastes amazing. I liked the composition of this butter-free cake. If there is starch, then the cake will turn out “silk”) I used corn starch, my favorite, I really love the result of its “work”. Kefir always adds juiciness and moisture. In the recipe I replaced the lemon with a tablespoon of prepared lemon juice and dried lemon zest. We don’t hold raisins in high esteem, I added candied fruits. I cut them into small pieces. There wasn't very much dough, so I baked it in a rectangular pan. I was very pleased with the result! The cupcake turned out fragrant and very tasty! It is porous, juicy, easily cut into pieces, and does not crumble. In the evening, the whole family enjoyed tea with this delicacy, there was not even any left for the morning) Thank you very much for this successful recipe! I recommend to everyone!

Hello. But something went wrong for me. I tried to make it according to the Cupcake recipe without butter. Where is the mistake . The cake did not rise and was not baked.
