STEP 1

How to make sour cream cake Curly Lad? Start by preparing the dough for the cakes. Use premium flour. Also take high-quality cocoa. Cocoa should have a rich color. Large, selected eggs are needed. Sour cream should not be watery, with a fat content of 20%. Wash the eggs and dry with napkins.
STEP 2

Beat the eggs with sugar into a fluffy foam. Add sour cream and mix until smooth. If desired, you can change the proportions of eggs and sour cream: take 200 g of sour cream and 4 large eggs.
STEP 3

Add the flour sifted with baking powder in parts, beating the dough at low speed.
STEP 4

Divide the dough into two unequal parts at the rate of 2/3 and 1/3. Add sifted cocoa to the smaller part of the dough and mix until smooth.
STEP 5

Pour the chocolate dough into a greased mold with a diameter of 20-22 cm. Bake the cake at 180°C for about 15-20 minutes until dry. Remove the finished cake from the mold and cool.
STEP 6

You can bake the light cake in any shape. I poured the dough into an 18 cm diameter mold and baked for about 40 minutes until dry. It is better not to open the oven for the first 25 minutes. The exact baking time for both cakes depends on your oven and the thickness of the cakes themselves.

Cool the finished white cake and cut into medium pieces.
STEP 8

Now prepare the cream. Use thick and fatty sour cream for it. Ideally - 30%.
STEP 9

Beat cold sour cream with sugar until fluffy.
STEP 10

Place the chocolate cake on the dish and brush it with sour cream. Set aside some of the cream for the final filling of the cake.
STEP 11

Dip pieces of light cake thoroughly on all sides into sour cream and place in a heap on the chocolate base.
STEP 12

Pour the remaining sour cream and sugar on top of the cake. Place the cake in the refrigerator to allow the sour cream layer to harden. Then, if you wish, you can pour sour cream over the cake again so that the top layer of cream is thicker.
STEP 13

While the cake is cooling, prepare the frosting.
STEP 14

Break the chocolate into pieces and combine with cream in a saucepan.
STEP 15

While stirring, melt the chocolate over low heat. You should get a flowing, slightly viscous, homogeneous glaze.
STEP 16

For convenience, transfer the glaze into a pastry bag and cut off the tip. You can use an ordinary spoon when pouring glaze over the cake, but the web from a pastry bag turns out neater and more beautiful.
STEP 17

Pour chocolate glaze over the Curly Boy cake and refrigerate overnight. Bon appetit!
