In addition to dinner, I made a cabbage salad with vinegar and oil. In winter, I really crave fresh vegetables! I came across cabbage that was surprisingly juicy for winter. I cut it into thin noodles, put it in a bowl and sprinkled it with salt. Accordingly, I no longer added salt to the dressing. I mashed the cabbage to make it even juicier and softer. I used a glove to prevent the salt from irritating my hand. For greens, I have green onions and parsley. First, I crushed the parsley with my hands to release the aromatic juice. For the dressing, I mixed olive oil and apple cider vinegar. I used half as much vinegar to suit my taste. I added a mixture of freshly ground peppers to this emulsion. The salad turned out delicious, juicy and aromatic!
