STEP 1

How to make butter in jars for the winter? Prepare the ingredients. It is better to collect boletus in the forest after rains so that they are not dry and rotten. Mushrooms need to be selected small, beautiful and fresh. Clean the mushrooms from forest debris, remove the film from the caps, remove wormy and spoiled mushrooms and wash them, pour cold salted water over the mushrooms and leave for 20 minutes so that various insects emerge from the mushrooms. Then rinse the mushrooms again.

Boil the butter in salted water for 10 minutes.
STEP 3

During cooking, skim off any foam that forms on the surface. Drain the water from the mushrooms, place the butter in a colander, and let the water drain completely.
STEP 4

Prepare the marinade. Pour water into the pan and turn on the heat. Add salt, sugar, bay leaf and peppercorns.
STEP 5

You need to prepare jars for mushroom preparation in advance. Wash the jars with soda solution, sterilize them in a water bath, in the oven or microwave, whichever you prefer. It is convenient to sterilize small jars on a kettle while boiling; just hold the jar for 5 minutes until the first drop falls from the bottom.
STEP 6

When the marinade boils, dip the boiled butter into it. Stir and cook the mushrooms in the marinade over medium heat for about 10 minutes. Then pour in the vinegar. If desired, you can add a few cloves of garlic, it will give the mushrooms a special aroma. Turn off the heat.
STEP 7

Fill the jars with mushrooms up to the shoulders of the jars. Pour the remaining marinade from the pan over them. Immediately roll up the lids on the jars. Let them cool upside down under a warm blanket at room temperature and store them in a cool place. Bon appetit!
