    Heat a small amount of refined vegetable oil in a frying pan. Send the vegetables to fry. Cook over high heat, stirring occasionally, until the onion is translucent. It took me about 2-3 minutes.

    Rinse the bulgur in cold water. Cut the pumpkin into small pieces.

    Add pumpkin and cereal to the pan. Salt to taste, and also add your favorite spices. I used a pinch of dried Italian herbs, a little nutmeg and allspice. If you use ready-made spice mixtures, be sure to read the ingredients on the package. Often such mixtures already contain salt, take this into account, otherwise you risk oversalting the dish

    Mix everything thoroughly. Add water. How much water do you need to take? Usually it is recommended to use one and a half to two parts of water for one part of cereal. Those. For one glass of cereal, take 1.5-2 glasses of water. I usually take 1.5 parts of liquid and the cereal has time to fully cook.

    After boiling, reduce the heat to low, cover the pan with a lid and cook for about 15-20 minutes. Sprinkle the finished dish with finely chopped herbs. Dill, green young onions or parsley work well.

I prepared bulgur with pumpkin. Grated the carrots and cut the pumpkin into pieces. Fry chopped onions, garlic and carrots in vegetable oil. I added bulgur and pumpkin to the fried vegetables, added hot water, salt, and used only ground black pepper as spices. Cooked over low heat until the liquid evaporated. The result was a very tasty, rich, aromatic, crumbly porridge with vegetables. Very tasty both as an independent dish and as a side dish. Thanks to the author for the recipe!

Today we had bulgur with pumpkin for dinner. This is a very unusual combination for us, it was interesting to try. I prepared and chopped the vegetables in advance so that I had time to put them in the pan. Chop the onions and carrots into small cubes. I loved the look of the brightly colored carrot cubes in this dish. Once everything was browned, I laid out medium-sized pumpkin cubes and bulgur. Followed by parsley, garlic and universal vegetable seasoning. First I poured 1.5 glasses of water and covered it with a lid. It soon became clear that there wasn’t enough water, so I added another half glass of boiling water and at the same time threw in a bay leaf. It turned out to be a bright and tasty dish! The bulgur is crumbly, the vegetable pieces are whole! It smells nice and unusual! Next time I would use chicken broth instead of water. I think it will be delicious too. Thanks for the recipe!
