Borsch without meat without frying with beets
Step-by-step preparation
STEP 1
How to cook borscht without meat and without frying with beets? Prepare all the necessary vegetables. If possible, use young cabbage; it is softer and sweeter, which will give the finished dish a special taste.
STEP 2
Peel the potatoes and cut into small cubes. You can chop the tubers in the way that is more familiar to you, for example, into cubes or very large fragments.
STEP 3
Pour cold water over the potatoes and place the pan over high heat. You can use chicken or vegetable broth instead of regular water. After boiling, reduce the heat to moderate, add a little salt and cook until the potatoes are ready (the time depends on what variety you use and what size your pieces are). It took me about 15-20 minutes.
STEP 4
At this time, prepare everything else. Peel the onions, beets, carrots and garlic and rinse together with bay leaves and herbs under running water.
STEP 5
Chop the cabbage into thin strips.
STEP 6
Grate the beets and carrots on a fine grater. Sprinkle the beets with freshly squeezed lemon juice, this will add sourness to the finished dish and preserve the bright red color of the broth.
STEP 7
Cut the onion into as small cubes as possible.
STEP 8
Make cross-shaped cuts on the tomatoes and pour boiling water over them. Leave it like this for 2 or 3 minutes.
STEP 9
Drain the water and easily remove the peel from the tomatoes.
STEP 10
Cut the tomatoes into small cubes. I usually use a few more cherry tomatoes. They have a sweetish taste, which will give the finished dish a special note and brightness.
STEP 11
When the potatoes are ready, turn the heat up to maximum. Place the beets, carrots and onions into the pan. Let simmer for about 3 minutes.
STEP 12
Next, add tomatoes to the borscht, lower the heat slightly and cook for another 5 minutes.
STEP 13
Add cabbage and bay leaf to the vegetables, add 1 tbsp if desired. vegetable oil. Cook everything together until the cabbage is ready (usually this takes from 3 to 5 minutes).
STEP 14
The finishing touches remain, add finely chopped herbs and garlic, chopped in any way convenient for you, to the finished borscht. You can also add your favorite spices in this step; I usually use ground red paprika. Taste again for salt and add more salt if necessary. Turn up the heat and after the first signs of boiling appear, remove the pan from the heat, cover with a lid and let the borscht brew for at least 15 minutes.
STEP 15
The most aromatic and delicious dietary borscht is ready! When serving, you can sprinkle with allspice or ground black pepper.
