    Pour cold water over the potatoes and place the pan over high heat. You can use chicken or vegetable broth instead of regular water. After boiling, reduce the heat to moderate, add a little salt and cook until the potatoes are ready (the time depends on what variety you use and what size your pieces are). It took me about 15-20 minutes.

    At this time, prepare everything else. Peel the onions, beets, carrots and garlic and rinse together with bay leaves and herbs under running water.

    Chop the cabbage into thin strips.

    Grate the beets and carrots on a fine grater. Sprinkle the beets with freshly squeezed lemon juice, this will add sourness to the finished dish and preserve the bright red color of the broth.

    Make cross-shaped cuts on the tomatoes and pour boiling water over them. Leave it like this for 2 or 3 minutes.

    Cut the tomatoes into small cubes. I usually use a few more cherry tomatoes. They have a sweetish taste, which will give the finished dish a special note and brightness.

    When the potatoes are ready, turn the heat up to maximum. Place the beets, carrots and onions into the pan. Let simmer for about 3 minutes.

    Next, add tomatoes to the borscht, lower the heat slightly and cook for another 5 minutes.

    Add cabbage and bay leaf to the vegetables, add 1 tbsp if desired. vegetable oil. Cook everything together until the cabbage is ready (usually this takes from 3 to 5 minutes).

    The finishing touches remain, add finely chopped herbs and garlic, chopped in any way convenient for you, to the finished borscht. You can also add your favorite spices in this step; I usually use ground red paprika. Taste again for salt and add more salt if necessary. Turn up the heat and after the first signs of boiling appear, remove the pan from the heat, cover with a lid and let the borscht brew for at least 15 minutes.

Meatless borscht without frying with beets is a recipe that preserves all the beneficial properties of the food, so I chose it for preparing my next lunch. I cooked the borscht in chicken broth, added fresh tomatoes and peeled them, pouring boiling water over them, as the author advised (it really worked very easy, I usually never do this). The children really liked the borscht 🙂 I will cook it again, I recommend the recipe!

I made borsch without meat without frying with beets for the children. This is a great dietary soup with lots of vegetables! It cooks quickly and easily. The first thing I did was set the potatoes to boil, and at this time I peeled and chopped the rest of the vegetables. If the cabbage is tough, it is better to add it to the pan after the potatoes boil. And if it’s soft and juicy, then it’s okay at the end. I laid it out after the other vegetables. I used lemon juice and added it to the pan along with the beets. Instead of fresh tomatoes, I added homemade grated tomatoes to the soup.
