My husband brought beets and asked to make a salad of boiled vegetables without mayonnaise. I found this recipe on the website and I liked everything about it. The composition is almost like a vinaigrette, only more gentle. I cooked the vegetables all together, only taking them out when they were ready. The beets were cooked longer and no soda was added. I have homemade cucumbers, I opened a jar, they are not very salty and sour. I took a small onion. We liked the salad, even my daughter ate it with pleasure. The vegetable cubes are soft, tender, and among them there are pieces of cucumber and onion. They crunch so nicely and give a richer taste compared to boiled vegetables. Wonderful salad, I used it as a side dish, very tasty!

I prepared a salad for the evening from boiled vegetables without mayonnaise. It really tastes like a classic vinaigrette. I boiled potatoes, carrots and beets, then peeled them, cut off their skins, and cut them into small cubes (I like this kind of cutting). I also cut pickled cucumbers and onions into cubes and marinated the onions in vinegar. I combined the vegetables in a deep plate, added unrefined vegetable oil (replaced olive oil) and salt. I didn't add lemon juice. Since the salad contained pickled vegetables (cucumbers and onions), the acidity and piquancy were enough to make the salad very appetizing and tasty!
