But you can replace it with red fermented one.

I baked this bread today. It’s very tasty. The crust is not thick, but crispy. I baked rye bread on the setting, 1000g, pale crust (I love it so much. In fact, it is never pale 😉). I used fermented malt. I like the color and smell better. And when I added the food, I added malt not last, but immediately to the water after the oil. I immediately dissolved honey and salt in water. And only then poured it into the bowl of the bread machine.

The bread has its own special taste thanks to malt, honey and coriander. The dough was too sticky when kneading. In order to form a bun of the correct shape in the bread machine, I added bran rather than flour for correction. I really liked the result. Many thanks to the author of the recipe!
