STEP 1

How to make Berezka cookies? Prepare the ingredients for making shortcrust pastry. Remove the butter in advance so that it becomes soft. Take the highest grade wheat flour.
STEP 2

Mix flour with baking powder and sift into a wide bowl.
STEP 3

In a convenient container, combine soft butter, sugar and vanilla sugar.
STEP 4

Using a fork or whisk, mash everything until smooth and fluffy.
STEP 5

Add half the egg, mix.
STEP 6

Add the flour sifted with baking powder and mix.
STEP 7

Quickly knead the shortbread dough. It should turn out soft and pliable. If the dough is too sticky to your hands, add a little flour. But do not overdo it so as not to make the dough tight. Wrap the dough in cling film and refrigerate for 1 hour. Why refrigerate the dough? To make it easier to form cookies. In addition, this will have a positive effect on the taste of the finished baked goods. The butter won't melt and the cookies will be crumbly and not chewy.
STEP 8

Divide the chilled dough into equal parts. I got 12 parts. Place the dough pieces in the refrigerator to keep them warm. Remove each piece of dough as you form the cookies. Roll a piece of dough into a sausage the thickness of your finger and knead it.
STEP 9

Lightly roll out the dough into a narrow rectangle 3-5 mm thick, slightly rounding the corners. Form cookies in this way from the remaining pieces of dough.
STEP 10

Carefully transfer the pieces to a parchment-lined baking sheet.
STEP 11

Bake cookies in an oven preheated to 200C for 8-10 minutes. It is important not to overdry the cookies so that they do not become hard. As soon as the edges begin to brown, remove the pan from the oven. Cool the finished cookies completely.
STEP 12

Any dark chocolate is suitable for decorating Berezka cookies, but, in my opinion, it is better to use bitter chocolate. It balances out the sweetness of the dessert a bit.
STEP 13

Separate the Oreo halves from the filling. Grind the cookies into fine crumbs.
STEP 14

Melt the chocolate in a water bath. To do this, place the chocolate broken into pieces into a cup, which is placed on a pan of boiling water. While stirring, stir until the chocolate is completely dissolved. You can melt chocolate in the microwave.
STEP 15

Spread the melted chocolate over each cookie, not going all the way to the edges. Wait for the chocolate to completely harden.
STEP 16

To prepare the glaze, sift the powdered sugar through a fine sieve.
STEP 17

In a suitable bowl, lightly beat the egg whites.
STEP 18

Add powdered sugar and grind.
STEP 19

Add lemon juice little by little while continuing to stir the glaze. Adjust the thickness of the glaze by adding lemon juice and powdered sugar. If the glaze is too thick, add lemon juice. If liquid, add powdered sugar.
STEP 20

Stir the glaze until the powdered sugar is completely dissolved. The glaze should be pourable so that it can be easily applied to the cookies.
STEP 21

Cover the chocolate layer with frosting. Leave some of the glaze, you will need it later. Let the glaze dry a little.
STEP 22

Using a toothpick, randomly scrape off some of the glaze in several places, imitating the pattern on birch bark. Let the cookies sit for a few minutes to allow the glaze to harden slightly.
STEP 23

Apply the remaining frosting in mounds near the areas made in step 21. Immediately sprinkle them with Oreo crumbs. Brush any loose crumbs off the cookies by turning them face down. Wait for the glaze to dry completely.
STEP 24

Use the tip of a knife to make cross lines on the cookies. The Birch cookies are ready.
