Beetroot and nut salad

This healthy salad will not leave beet lovers indifferent! I tried to prepare this salad during Lent, so instead of mayonnaise I had to add vegetable oil. I thought it would be tastier with mayonnaise, but it turned out to be nothing like that. Delicious, nutritious, and most importantly a quick salad. Most of the time is spent cooking beets.

    Boil beets

    Grate the beets on a coarse grater

    Grate the garlic on a fine grater. Mix beets, garlic and pine nuts, add oil (you can use mayonnaise instead of oil, but not during Lent, of course) Mix everything, you can decorate with herbs.

A very inexpensive and tasty beet salad with pine nuts. I prefer to steam beets in a slow cooker. I added young garlic to this salad, and chose fresh cilantro as a herb. I lightly fry the pine nuts before adding them, this way their flavor is better revealed. If I dress a salad with olive oil, I give preference to oils with various additives: white truffle flavor, rosemary, chili pepper. You can season the salad with homemade mayonnaise. If you refrigerate the salad, it will be even tastier!
