Baked eggplants with cottage cheese and cheese
Eggplants can be stuffed with more than just meat or vegetables. I have long wanted to try this recipe - bake eggplants with cottage cheese. A long time ago I baked peppers with cottage cheese and feta cheese - it turned out simply incredibly tasty. I heard that you can stuff eggplants with cottage cheese. And finally, we got around to implementation. What can I say - I definitely liked it. I will cook it again, and more than once.

Step-by-step preparation
STEP 1

Measure out ingredients.
STEP 2

Wash the eggplants and cut them in half lengthwise.
STEP 3

Boil in salted water for about 20 minutes.
STEP 4

Grate the cheese on a medium grater.
STEP 5

Finely chop the parsley.
STEP 6

Pass the garlic through a press.
STEP 7

Cool the eggplants and carefully, being careful not to damage the walls, remove the pulp.
STEP 8

Finely chop the eggplant pulp.
STEP 9

Combine eggplant pulp, cottage cheese, cheese, garlic, egg and herbs.
STEP 10

Mix.
STEP 11

Fill the eggplants with the filling and place in a baking dish. Bake for 30-35 minutes at 180°C.
