    How to make apple pie from rice flour with PP kefir? Measure out the required ingredients. Remove the butter from the refrigerator in advance so that it becomes soft. Kefir should not be cold either. It is better to take medium-sized sweet and sour apples.

    Combine rice flour with baking powder and sift through a sieve. Sifting will enrich the flour with oxygen, thanks to which the cake will rise better during baking and will turn out fluffy.

    Wash the eggs and dry them. Separate the whites from the yolks. Do this carefully so that not a drop of yolk gets into the whites. Otherwise, the whites will not whip into a stable foam.

    Combine soft butter with cane sugar and vanilla sugar. Beat with a mixer until fluffy and homogeneous.

    Add the yolks in parts (2 yolks at a time), beating well after each addition.

    Pour in kefir, beat lightly again.

    Add flour sifted with baking powder. Mix the dough with a spatula or mixer until there are no lumps of flour.

    Rinse the mixer whisks thoroughly and dry. There should be no oil residue on them. Otherwise, it will make it difficult to beat the egg whites. Beat the whites first at low speed until soft foam, then gradually increase the speed. Beat the whites until stiff, stable peaks form.

    Add the whipped whites in parts, gently stirring the dough with a spatula.

    The dough turns out viscous, thick, homogeneous.

    Wash the apples and dry them. Some of the apples will be inside the pie (I cut them into cubes), the rest will be on top. You can remove the peel from the apples, or you can leave them on. But if the skin is too rough and thick, it is better to cut it off. Cut the apples for the top into medium-thick slices. Sprinkle the prepared apples with lemon juice to prevent them from browning longer.

    Line the bottom of a baking dish with a diameter of 20-22 cm with parchment. Grease the walls of the mold with a thin layer of odorless vegetable oil. Place half of the dough and smooth it out.

Please note that baked goods made from rice flour will take a little longer to cook than those made from wheat flour. Determine the readiness of the pie with a skewer. If a skewer removed from the middle of the pie comes out dry, the pie is ready. Let it cool slightly in the pan, then remove. Cool the pie completely.

I have a lot of rice flour left in my supplies, I used to cook porridge for my child from it, now I found where else I can use it, I made an apple pie from rice flour with kefir pp. I specially collected homemade apples for the pie; all the other ingredients were in the kitchen, only sugar was not brown, but regular. The finished pie turned out golden brown and aromatic, soft inside and very tasty :) Thanks to the author for the recipe!
