    Beat the eggs with a mixer until light foam appears. Then gradually add sugar in small portions and continue beating until fluffy for 3-5 minutes. To check how well the eggs are beaten, draw a line along the mixture with a spatula. If the mark lasts for 1-2 seconds, then the eggs have been beaten to the desired consistency. If the mark disappears instantly, you need to continue whisking. It is important not to overbeat the eggs - there should be small bubbles on the surface.

    Sift the flour with baking powder into a separate bowl. The flour must be sifted - this way it is saturated with oxygen, and the dough becomes airy. If you have time, it’s even better to sift the flour twice.

You can use a spatula, but the mixer will still mix the dough better and more evenly.

    Wash the apples, peel them, remove the core and cut into medium pieces. I didn't peel the skin because my apples have thin skin and I don't mind the skin))

    Cover a mold (20-22 cm) with parchment and grease the bottom (but not the sides!) with butter. Place the dough into the mold and smooth it out. If desired, sprinkle a thin layer of sugar evenly over the top of the dough. I didn’t do this, the dough was already sweet. Bake the charlotte in an oven preheated to 180°C for about 40-50 minutes. Do not open the oven door for the first 25 minutes, otherwise the cake will settle. Check readiness with a wooden skewer - it should come out dry.

This is the fastest, simplest and always successful charlotte recipe. I kneaded the dough in a matter of minutes, picked the apples straight from the tree, and cutting them was no problem either. It turned out to be a wonderful pie! Not dry, the apples give it a little moisture and juiciness. I took a mold with a diameter of 24 cm, but the cake came out tall and fluffy. Thank you for the gorgeous charlotte recipe! I’ve never made it so fluffy before. Finally it turned out perfect in both consistency and taste. True, there is too much sugar for me, next time I’ll try adding half as much. It turned out to be a lot of dough, I also added a lot of apples (that’s how they like it in my family), so I ended up with two charlottes! Juicy, soft, crazy aroma!!! The first one scattered instantly, the second one I left for a couple of days in the refrigerator, sealed in its tin, and I really liked the result - such a soft, delicate soaked sponge cake that tastes like a delicious cupcake! I also added 1/2 spoon of berry-coconut liqueur to the dough, and to the apples, of course, my favorite cinnamon! Plus, I flavored the finished charlottes a little with melted butter for greater softness. Next time I plan to make an even larger portion!!!
