I only know the version of stewed zucchini with potatoes, bell peppers and tomatoes and without cabbage. I cook often during the season.

I saw frozen zucchini in the freezer and really wanted to stew them. I took the recipe “zucchini with potatoes, cabbage and meat” as a basis and made a wonderful stew according to this recipe only without meat. I prepared the dish in the slow cooker instead of the stove. First I fried the onions and carrots. Then I fried it along with the potatoes until half cooked. At the end I added cabbage and frozen zucchini cubes without defrosting, tomato paste and a little salt. Simmered for 15 minutes. The stew turned out to be very aromatic, tasty and light. The vegetables hold their shape well and are not overcooked. Incredibly simple and delicious. In winter, this stew is very reminiscent of summer, when there are young zucchini. Great recipe.
