STEP 1
How to make a zucchini roll with cheese? Prepare your food. What kind of zucchini works best? Choose young fruits with delicate skin. Wash them and peel them. It is not necessary to cut off very thin skin. If using more mature squash, trim off the rough skin and scoop out the seeded center.
STEP 2
Grate the zucchini on a fine grater, add salt, then squeeze the juice well.
STEP 3
Wash the eggs, then separate the yolks from the whites. Be sure to wash your eggs before using them, as even seemingly clean shells can harbor harmful bacteria. It is best to use food grade detergents and a brush. Lightly beat the yolks with salt and spices. Choose spices according to your taste or availability.
STEP 4
Wash the greens, dry well and chop finely. Combine the zucchini, yolks, finely chopped herbs and mix.
STEP 5
In a separate bowl, beat the egg whites until stiff.
STEP 6
Add half of the whipped egg whites to the vegetable mixture. Mix the mixture with a spatula using very gentle upward movements.
STEP 7
Add the flour sifted with baking powder and mix gently.
STEP 8
Then add the remaining whites and mix until smooth using the same bottom-up movements. It is important to act carefully to preserve any air bubbles that have formed during beating. They are the ones who will make the dough airy.
STEP 9
Line a baking tray with baking paper. Lubricate it with oil. Place the dough on the paper and gently smooth it out with a spatula. The thickness of the layer should be no more than 1 cm. Place the baking sheet with the dough in the oven, preheated to 180 degrees.
STEP 10
While the crust is baking, grate the cheese on a fine grater.
STEP 11
The finished cake will hardly be browned in appearance. If, when pressed, the dough springs slightly and does not press through, then the cake is ready. Baking will take 15-20 minutes.
STEP 12
Remove the finished zucchini cake from the baking sheet along with the paper and spread it with sour cream while hot. If you wish, you can add chopped garlic to the sour cream, this will make the snack spicier. Then sprinkle the crust evenly with grated cheese.
STEP 13
While the cake is still hot, carefully but quickly roll it up, separating it from the parchment. The cheese inside must melt, so it is important that the crust is warm. Let the roll cool and then refrigerate.
STEP 14
Cut the roll into portions and serve, garnished with herbs. Bon appetit!
