    How to make zucchini and orange jam? Prepare your food. For this recipe, it is better to use young zucchini. But if yours is more mature, cut off the peel and remove all the seeds. Wash the vegetables and fruits well and dry with napkins. It is better to wash citrus fruits with a brush and pour boiling water over them.

    My zucchini is young, its skin is still soft, I cut the zucchini without peeling it. Cut the zucchini into medium sized cubes. Transfer the chopped zucchini to a saucepan or other container in which you will cook the jam.

    Remove the zest from washed lemons and oranges using a fine grater and add it to the zucchini.

    Also cut off the white dense skin from oranges and lemons, and cut the fruits themselves into small pieces and add them to the zucchini. Be sure to remove all the seeds, both orange and lemon. Even one seed can add bitterness to the finished jam!

    Add sugar to the food and let it sit for a while to release the juice. Stir and cook the jam in two batches. To do this, bring (always over low heat) the jam to a boil, boil for 2-3 minutes, if foam appears, remove it with a slotted spoon. Then turn off the stove and let the jam cool completely to room temperature. Bring the jam to a boil again, simmer for 2-3 minutes and let cool again. The procedure can be repeated up to 3 times.

Remove the skin and seeds from the zucchini and cut into pieces. The recipe also calls for lemon, but I only used oranges. I didn’t cut the skin off of them, because... It tastes so good to me. How wonderfully zucchini and orange go together. The result is a delicious, unusual and brightly sunny jam that lifts your spirits just by its appearance, not to mention its fantastic taste.
