Yurcha from zucchini in a slow cooker

Want to discover the perfect winter squash salad? Prepare yurchu - this is it. A popular zucchini appetizer according to Oktyabrina Ganichkina’s recipe. Excellent preparation for the winter! Since I am the happy owner of two multicookers, I decided to adapt it for cooking in this device. Using a multicooker makes the cooking process extremely simple, especially given the summer heat.

  1. STEP 1

    STEP 1

Set of products. Don't forget to prepare two and a half liter jars!

  2. STEP 2

    STEP 2

Peel the zucchini, if necessary, clean out the middle with the seeds.

  3. STEP 3

    STEP 3

    Cut them into large cubes.

  4. STEP 4

    STEP 4

Remove the center from the peppers and cut into small squares.

  5. STEP 5

    STEP 5

Grind tomatoes, garlic and parsley in a blender or pass through a meat grinder. Pour the mixture into the multicooker bowl. Add vinegar, oil, salt, sugar and spices, mix.

  6. STEP 6

    STEP 6

Using the Multicook mode (160 degrees), bring to a boil. Add the zucchini and peppers.

  7. STEP 7

    STEP 7

Stir gently with a spatula. Using the same mode, bring to a steady boil.

  8. STEP 8

    STEP 8

Then we switch to the Stewing or Multicook mode, 100 degrees. Time 1 hour. This is what we get. The smell is simply intoxicating! No amount of hood can save you!

  9. STEP 9

    STEP 9

Place the mixture in sterilized jars, screw on the boiled lids, and turn them upside down. Leave until completely cooled. I got about two and a half liters of snacks from this amount of ingredients. And there's still a little more to try! Personally, I didn’t have enough salt, I added it at the very end. But be guided by your taste. Good luck with your preparations!

Very tasty salad) Thanks to the author! But you really need to eat it after a couple of months, it needs to brew. My daughter and I close 30 jars each time.
