    How to make yeast-free pie dough in the oven? Prepare all the necessary ingredients. Remove the kefir from the refrigerator in advance so that it comes to room temperature. As a last resort, you can warm it up slightly in a saucepan. It is advisable to use fresh kefir with a fat content of 2.5%. Pour it into a deep bowl suitable in volume for kneading the dough. Add baking soda and mix well. Kefir will extinguish the soda and the mass will foam a little and rise.

    Next, pour vegetable oil into the kefir. Break the egg into a small bowl, beat it until combined with a fork or whisk and add to the kefir. Then add salt and sugar. Mix everything well. Wash the egg with baking soda first, as it may contain harmful bacteria.

    I sifted the flour through a sieve into a separate bowl and immediately weighed it on a kitchen scale. You can first weigh it or measure it with a measuring cup and sift it directly into the bowl with the dough. Add half the flour and begin kneading the dough in a circular motion. The mass will begin to thicken.

    Add the remaining flour and start kneading with your hands. Place the thickened dough on a table lightly dusted with flour and continue kneading until the dough stops sticking to your hands. Form a bun, cover with foam and let rest for 10 minutes. Then use it for its intended purpose.

To make pizza, I used yeast-free pie dough as a basis. I replaced 50g of wheat flour with whole grain flour and did not add sugar. I used the total amount of flour suggested by the author. After resting, the dough was easily rolled out on a silicone mat, transferred to a sheet using a rolling pin, added pizza toppings and baked in the oven for 20 minutes. Excellent pizza dough!
