    Dissolve the yeast in warm whey heated to a temperature of 37-40℃. I usually scatter the yeast over the surface without stirring so that it does not stick to the spoon. Leave for 10 minutes for the yeast to activate and a fluffy cap to appear. If this does not happen, baking will not work.

    Pour the egg mixture, melted butter and vegetable oil into the active yeast. Mix thoroughly.

    Knead into a soft, elastic, non-sticky dough. If the dough is still sticky and you need even more flour than the recipe calls for, it is better not to overfill the dough with flour, otherwise the finished dough will be too dense and tasteless. Place the dough to proof. After rolling out, sprinkle the table and rolling pin with flour - the dough itself will take as much as it needs.

    Roll the finished dough into a ball, place in a bowl, cover with a towel and leave in a warm place for 1 hour to rise.

After making the cottage cheese, I still had some whey left over. I decided to use some of it to make whey buns. Instead of vanilla sugar, I added a pinch of vanillin. I replaced the butter for the dough with the same amount of margarine. For the filling I used butter, of course. I used about 560 grams of flour. The dough was still a little sticky, but in order not to fill it with flour, I simply greased my hands with vegetable oil while kneading. Within an hour of rising, the dough had approximately tripled in size and was no longer practically sticky. I baked the buns (I got 10 pieces) in a cast iron frying pan (the bottom was covered with parchment) at 180 degrees for 30 minutes. The result was a real bun pie, beautiful and fragrant. The buns are very tender, soft as feathers. They are moderately sweet with a pleasant creamy taste. Maria, thank you very much for the wonderful recipe!

For the first time I decided to make buns with whey, I was inspired by your recipe. I also sometimes make cottage cheese at home when I have time, but it was always a pity to pour out this yellowish whey..
