  1. STEP 1

    STEP 1

How to prepare viburnum with honey for the winter? Prepare the necessary ingredients. It is better to collect viburnum from the tree in whole bunches, rather than individually. It is best to do this on a sunny day without precipitation. It is necessary to sort the collected fruits immediately, removing rotten and spoiled berries, otherwise there is a risk of losing most of the harvest. To prevent the berries from becoming too bitter, viburnum should be collected after the first frost.

  2. STEP 2

    STEP 2

Before picking viburnum berries from the branches, rinse them.

  3. STEP 3

    STEP 3

To prevent the preparation from fermenting, the washed berries must be thoroughly dried. To do this, lay them out in one layer on a clean cotton cloth. If you picked viburnum before the cold weather and you don’t like the bitter taste of the fruit, you can put the washed and dried berries in the freezer for 2-3 days. Please note that it is not possible to completely remove the bitterness from viburnum. Sterilize the jars and lids in advance in a way convenient for you.

  4. STEP 4

    STEP 4

It is best to choose liquid honey. If you have candied honey, you can melt it in a water bath.

  5. STEP 5

    STEP 5

Once the berries are dry, chop them in any convenient way. I used an immersion blender for this. You can also use a meat grinder or a regular masher. Frozen berries must first be thawed.

  6. STEP 6

    STEP 6

Transfer the resulting puree into a suitable container.

  7. STEP 7

    STEP 7

Add honey to the viburnum puree.

  8. STEP 8

    STEP 8

Mix the puree with honey thoroughly. Place the resulting mass in dry, sterilized jars and close with lids.

  9. STEP 9

    STEP 9

Viburnum turns out very tasty and pleasant to the taste. The bones remain in this mass. If you wish, you can get rid of them by passing the mass through a meat grinder several times or rubbing it through a sieve. Bon appetit!

When preparing viburnum, I always ground it with a masher. It seemed that when using a blender the seeds would also be crushed, which would spoil the taste of the finished product. It turned out my fears were in vain. I really liked this way of processing the berries, they gave a lot of juice, and I was not too lazy to grind them through a sieve. If previously the berries, along with the seeds, were poured with boiling water and strained using a French press, now you can enjoy the living product. As a thrifty housewife, she didn’t throw away the rest of the production, so to speak. When brewing herbal infusions in a thermos, I will add them there. Thanks for the recipe, wella.

Wella, thank you for the recipe, I’ve been looking for it for a long time, my grandmother prepared viburnum this way, she was actually an herbalist. But, unfortunately, she has been gone for a long time, I can no longer ask. Only she had whole berries. Thank you very much again!

Viburnum is a wonderful berry! I love it very much for its tart and slightly bitter taste. We grow viburnum in our village, we squeeze the juice out of it and add it to tea in winter to prevent colds. Now, I’ll also try to make viburnum with honey. Both of these components are a huge storehouse of vitamins and nutrients. I was especially interested in the second recipe - berries in honey should be very popular with children. Both tasty and healthy!
