STEP 1

How to make vegetable stew with zucchini and tomatoes? Prepare your food. Take a medium-sized zucchini; both young fruits and more mature ones are suitable. Tomatoes are also medium-sized, or one large. In addition to this set of vegetables and herbs, you can add others to your taste - carrots, peppers, eggplant. Wash the vegetables well and dry.

Peel the onion and cut into arbitrary pieces, but not too small so that it can be felt in the finished dish. I cut the rings into quarters.
STEP 3

If you have a young zucchini, cut it into large pieces. Small seeds can be left. For mature zucchini, cut off the skin and cut out the center.
STEP 4

Remove the skins from the tomatoes. How easy is it to do this? Wash them and make cross cuts on top with a sharp knife. Pour boiling water over for 1-2 minutes. Then transfer to a bowl of cold water. Due to temperature changes, the skin can be removed very easily with a knife.
STEP 5

Chop the peeled tomatoes into large pieces and cut out the place where the stem attaches.

Finely chop the greens with a knife.
STEP 7

Peel and chop the garlic in any way - with a knife, on a grater or through a press.
STEP 8

Heat a frying pan over medium heat, pour odorless vegetable oil into it for frying. Place the onion in the pan. Fry it for a couple of minutes until transparent.
STEP 9

Add zucchini to onions. Fry them, stirring, for five minutes. If the zucchini is old, increase the frying time to 10 minutes.
STEP 10

Add tomatoes to the pan, salt and pepper the dish. You can also use your favorite spices; Provençal herbs go well with vegetables. Mix the ingredients carefully so as not to mash them. Cover the pan with a lid and turn the heat to low. Simmer the stew for 5-10 minutes, depending on the ripeness of the vegetables.
STEP 11

Then add the herbs and garlic, stir and simmer, covered, for about a minute. Then turn off the heat and leave the stew to stand for a while under the lid so that it is saturated with aromas.
STEP 12

Serve the dish to the table. Bon appetit!
