It is important not to overdo it with soda, as the baked goods will be spoiled by its specific taste.

Tsvetaevsky apple pie is one of the most popular apple pies, probably the second most popular after charlotte. Since everyone unanimously loves the pie and it disappears at cosmic speed, I prepare it not for 8, but for 12 servings, increasing the ingredients by one and a half times. With this calculation, the result is 1.5 eggs, but I boldly put two and the filling does not suffer at all from this, just like the pie itself, rather it benefits. I had the dough in the refrigerator just long enough to make the filling and prepare the apples (about 10-15 minutes). I agree with the author that it may not be worth keeping the dough in the cold for an hour, but I still advise you to put it in the refrigerator while preparing the remaining ingredients, so it will be more convenient to work with it. Baked in a ceramic square pan measuring 22.5 x 22.5 cm, lined with parchment. I advise everyone who will be preparing a pie for the first time to distribute the dough well at the junction of the bottom and the sides so that there is not too thick a layer in the corners (if the shape is square), this way the dough will bake better. More tender than tender! For me, this is the best combination of apples and dough, may Charlotte lovers forgive me. The dough turned out crispy, the filling was tender and creamy, and that sourness of the apples. It’s very simple to prepare, but it turns out incredibly tasty. I kept the dough in the refrigerator for only half an hour while I cut the apples and prepared the filling, and in my opinion this is quite enough) And I decided to add a pinch of cinnamon to the filling, because I really love this combination with apples - it’s as autumnal as possible. The smell in the apartment, of course, was incredible. Believe me, this pie will be eaten before it has completely cooled down, but I prefer it cold.
