    For the recipe, I specifically weighed all the ingredients. Usually I take 1 cup of cottage cheese, 2 cups of wheat flour and a pack of butter. A few hours before cooking, remove the butter from the refrigerator so that it has time to soften at room temperature.

    It is important to sift the flour to saturate it with oxygen. Then the baked goods will turn out airy and rise well during baking. Please note that you may need more or less flour. Everything will depend on its quality and variety. Therefore, just in case, sift it a little more than indicated in the recipe.

    Place soft butter into the flour mound. You can replace it with margarine. It will turn out delicious in both cases. But baking will be healthier with butter.

    Using a knife, chop the butter, combining it with the flour. The dough can also be mixed in a food processor. It will be faster and easier. In this case, cut the butter into small cubes, place it in the bowl of a food processor, add flour and grind using equipment.

    You should get very fine, uniform crumbs.

    Now add curd. Which cottage cheese is best? You can take a product with any percentage of fat content. A fattier product (from 9% to 23% fat) will make baked goods tastier, but higher in calories, than a low-fat product. Take not lumpy, but pressed cottage cheese. It is more homogeneous and mixes better with the other ingredients.

    Continue chopping the curd and flour mixture with a knife, mixing the ingredients until smooth. Add baking soda and a pinch of salt, but this is optional. The cookies turn out just as good without them! If you are afraid of the taste of soda, replace it with baking powder (1 tsp).

    Knead the dough for about 5 minutes, gathering it into a ball. At first it will crumble. But in the process of kneading it will become elastic, soft and obedient. The consistency of the dough is plastic, smooth and not very steep. If it continues to stick to your hands, add a little flour.

    The resulting dough ball can be wrapped in cling film and hidden in the refrigerator for 1 hour. After resting in the cold, it will become more elastic and will not crumble. But, if you don’t have extra time, you don’t have to do this. The dough rolls out just as well without cooling. And you will significantly save cooking time. Divide the dough into two parts.

    Dust your work surface with flour to prevent the dough from sticking to it. Lay out the first part of the dough. Roll it into a thin layer 2 mm wide.

    Using a small glass, goblet, cooking ring or mug, squeeze out circles with a diameter of 9-10 cm.

    Gather the dough scraps and add to the remaining half of the dough. Mix again and set aside. We will roll out this dough a little later, but for now we will start forming cookies from circles.

    Pour granulated sugar into a plate. Regular white sugar can be replaced with brown sugar. Then the finished baked goods will acquire a pleasant caramel aroma and taste. Take one circle of dough. Dip one side of it in sugar. To make the sugar stick to the surface better, you can lightly beat the egg in a separate plate. First, brush the surface with a silicone brush with the egg mixture, and then dip it in granulated sugar.

    Turn the circle over in your palm, sugar side up.

    Fold the circle in half. You will get the shape of a dumpling, and the sugar will be inside.

To prevent our cookies from sticking during baking and from burning, be sure to line the baking sheet with baking paper. Or use a Teflon mat if you have one available. Place the dough on a baking sheet so that the sugar side is on top. Since they will grow in the oven, leave some space between them.

    In advance (10-15 minutes before baking), turn on the oven to preheat to 180 degrees. Bake the cookies for about 15-20 minutes until golden brown. Ovens are all different and have their own characteristics, so the temperature and baking time may be different. Be guided by the color of the baked goods. When it gets a golden tan, take it out.

    The cottage cheese triangles are ready! Remove the baking tray with cookies from the oven. Carefully transfer the baked goods to a plate. AY! AY! The first time I made a mistake (I watched the video 3 times): after all, I thought that these were buns....well, therefore, you eat one and “STOP”.
