STEP 1

Beat the eggs into a deep bowl. Salt and pepper. Beat until relatively smooth. Wash the eggs with baking soda first to remove dirt from them.

STEP 4
Wash the parsley in running water, dry with a paper towel and finely chop with a knife.
STEP 5
Place a tortilla sheet in a dry frying pan. If the tortilla is larger than the diameter of the frying pan, then each tortilla needs to be cut so that the diameter is slightly larger than the diameter of the frying pan, so that the edges are slightly raised, then the filling will not leak outside the tortilla. STEP 6
Pour the beaten eggs on top, being careful not to let the mixture leak out of the cake. Cover the pan with a lid and cook the tortilla for 5 minutes over medium heat.

Cover the filling with the second tortilla and press down. Turn the tortilla over and cook for another 2-3 minutes.
