STEP 1
How to make tomato sauce with cilantro and garlic for barbecue? Prepare all the necessary products. Take fresh, young and aromatic cilantro. Tomato paste can be replaced with tomato juice, but you just need to boil it just a little until it has a denser texture.
STEP 2
Wash the cilantro, dry and finely chop. I chop the cilantro with kitchen shears to make it finer. But first, I wash it well and dry it, wrapped in a paper towel - this way the pieces of greenery will not stick to the scissors.
STEP 3
Add chopped garlic to the chopped herbs. I passed the clove through the press. But you can also grate the garlic on a fine grater or chop it with a sharp knife. If fresh garlic is not available, it can be replaced with garlic powder.
STEP 4
Grind the greens with garlic using a mortar or just a masher.
STEP 5
Add suneli hops and dry adjika. Basically, you can add some of your favorite seasonings to your taste. For example, I prefer utskho-suneli - this seasoning contains fenugreek. Some people will prefer ground paprika, and this will also come in handy, especially smoked paprika, it will give the sauce a slight note of fire.
STEP 6
Add ground hot pepper. I have black, but it can be red, white, and even fragrant if you grind it using a special mill.
STEP 7
Pour in vinegar. It can be any fruit: apple like mine, grape, wine, raspberry, black currant and even the usual 6-9%. If you have vinegar essence, dilute it with water. To get 8% vinegar you need 1 tbsp. essences take 8 tbsp. water
STEP 8
Add tomato paste or boiled tomato juice. In principle, you can use ready-made ketchup, but it usually still contains some additives and flavorings, so the taste of the finished sauce will change a little.
STEP 9
Mix everything thoroughly until the texture is homogeneous and, if necessary, dilute with boiled chilled water to the desired thickness of the sauce. The sauce with cilantro and tomato paste is ready.
STEP 10
This sauce is perfect for all types of kebabs, fresh vegetables and vegetable salads. Even fresh green onions with this sauce seem tastier! Bon appetit!
