Tiramisu cream with mascarpone and eggs
Cream on raw eggs for the famous Italian dessert. Culinary debates about tiramisu are still ongoing. And the main disagreements concern the cream: how best to prepare it - with raw eggs or with heat treatment. I’ll say right away that raw eggs are quite dangerous. However, even this risk cannot make me refuse a few spoons of eggnog when I prepare charlotte. Therefore, I wasn’t particularly worried here either. To say that I really liked this cream is to say nothing. The most delicious tiramisu I've ever tried.

Prepare the ingredients.

Separate the whites from the yolks.
STEP 3

Combine the yolks with powdered sugar.
STEP 4

Beat into a light fluffy mass.
STEP 5

Add mascarpone at room temperature and stir until smooth. Beat with a mixer at low speed and very briefly, because the mascarpone can be over-beated and it will turn into flakes.
STEP 6

Combine whites with salt.
STEP 7

Beat with a mixer into a strong foam.
STEP 8

Gently fold the whipped whites into the cheese mixture.
STEP 9

You should get a homogeneous fluffy cream. You can make tiramisu!
