STEP 1
How to bake thin, yeast-free pancakes with holes in milk? Remove kefir (I have a fat content of 3.2%) from the refrigerator in advance so that it is at room temperature. The eggs must be cold.
STEP 2
Add sugar, salt and soda to warm kefir. When kefir and soda are combined, a reaction will begin: many bubbles will appear on the surface of the kefir.
STEP 3
Separate the yolks from the whites in a way convenient for you. It is important that not a single drop of yolk gets into the whites.
STEP 4
Add the egg yolks to the kefir and mix again.
STEP 5
Beat the whites with a mixer until stiff peaks form. The container in which you will beat them must be completely dry.
STEP 6
Add sifted flour and stir. You may need a little more or a little less flour. The consistency of the dough should be like thick sour cream. To avoid lumps, you can use a mixer.
STEP 7
Boil milk in a saucepan or small saucepan.
STEP 8
Pour hot milk into the dough in a thin stream, stirring constantly. This way the dough will be cooked.
STEP 9
Add vegetable oil to the dough and mix.
STEP 10
Add the beaten egg whites to the dough and mix gently.
STEP 11
The dough should be airy and liquid, like kefir. If the dough turns out thick, then dilute it with boiled water or milk, and if it is too liquid, then add a little flour.
STEP 12
Grease a heated frying pan with vegetable oil. Pour some dough onto it and quickly spread it over the entire surface of the pan. Bake the pancakes over medium heat for about half a minute on each side until golden brown. Ready-made pancakes can be greased with butter. Bon appetit!
