Today is the second day of Maslenitsa. This Slavic holiday is one of the most fun and delicious. My household ordered pancakes yesterday. I always make pancakes with kefir and water. But Yulia M.’s recipe became a discovery for me. I didn’t know that pancake batter can be steamed with hot water. I decided to try cooking it this way. The dough turned out homogeneous and so plastic or something. Not a single pancake came out lumpy. The pancakes were very easy to remove and did not tear. The recipe is great! The pancakes turn out thin, with a hole in them. Baking and eating are a pleasure! I’ve baked custard pancakes with kefir before, so I want to share my addition: I recommend heating the kefir a little and adding baking soda to the kefir. Otherwise, everything is the same, the proportions and ingredients in this recipe are chosen perfectly.
