    Let's prepare everything you need to cook sweet potatoes. In the recipe I used store-bought finely grated Parmesan cheese and frozen herbes de Provence. Wash the sweet potato very thoroughly with a brush or sponge to remove all dirt since we will not peel the peel, we will bake it along with it.

    Dry the sweet potatoes with paper towels and cut into long, but not very thick, sticks. The tuber itself is very dense, so it is better to use a thin and sharp knife (be careful not to get hurt!).

    Prepare the sauce. In a deep small plate, mix soy sauce and vegetable oil. Add a pinch of nutmeg, Italian herbs and garlic pressed through a garlic press. I add another pinch of salt, even though the soy sauce itself is salty, since the sweet potato is very sweet. Mix everything well.

    Add sauce to sweet potatoes.

    Using a spoon or your hands, mix everything so that the soy sauce is evenly distributed throughout all the slices. If you mix with your hands, I recommend using rubber disposable gloves, since if you have wounds on your hands, they may begin to tingle when the salty sauce gets into them.

    Line a baking dish with baking paper. Place the potato slices at a short distance from each other. Cover the baking sheet with foil and place the sweet potato in a preheated oven at 200 degrees for 30 minutes (top-bottom mode).

    Remove the foil, sprinkle the top of the sweet potatoes with Parmesan and return to the oven for 5 minutes. If possible, change the mode to “convection” so that the cheese and potatoes brown.

I learned about sweet potatoes from Margaret Mitchell's book Gone with the Wind. Before that, I had never even heard of him. Then I began to pay attention to it in stores, but did not dare to buy it, simply not knowing what could be made from it. And when I came across a recipe for sweet yam baked in the oven with cheese, I thought it was time to get to know this root vegetable better. I bought a very small sweet potato, only 145 grams. I had all the other ingredients except the Italian herbs. I did everything according to the recipe and the result surprised me. It turned out unusual. It turned out to be a very interesting contrast of sweet and salty. Even the children said it was delicious. I liked the recipe.
