Step-by-step preparation
STEP 1
How to make sweet bread? Prepare all ingredients. Take premium flour, eggs of category C1, remove butter from the refrigerator in advance - it should be soft, milk can be used of any fat content.
STEP 2
Pour boiling water over the oranges and leave to dry. Place the raisins in a bowl, pour boiling water over them, drain in a colander after a couple of minutes, then place the raisins on a towel and let them dry.
STEP 3
Sift the wheat flour through a sieve into the bowl in which you will knead the dough. By sifting, the flour will be filled with oxygen, which will make the dough more tender and soft, and will also remove unnecessary impurities and debris that may be in this product.
STEP 4
Add dry yeast, sugar, vanilla sugar and salt to the flour. Mix all dry ingredients with a whisk for 1 minute, so the dough will become even more airy.
STEP 5
Place the butter in a small saucepan and melt. Pour milk and water into another ladle and heat a little on the stove. The milk liquid should be slightly warm, but not hot, otherwise the yeast will die in the overheated milk water.
STEP 6
Beat eggs into a bowl with bulk ingredients, pour in melted butter and heated milk water. First, start kneading the dough with a wooden spoon, and then, when the dough comes together, transfer it to a floured work surface and knead with your hands for about 7 more minutes. If necessary, you can add flour, but do not beat the dough, otherwise it will turn out very tough and tasteless.
STEP 7
Return the kneaded dough to the bowl, cover with a towel and place in a warm place for 1 hour. While the dough is preparing, make the filling.
STEP 8
Remove the zest from the oranges. Mix granulated sugar with ground cinnamon.
STEP 9
After 1 hour, the dough should approximately double in size.
STEP 10
Punch down the risen dough and, using a rolling pin, roll out the dough into a layer measuring approximately 50cm*50cm. Grease the surface of the dough with soft butter. Spread dried raisins and orange zest evenly onto the dough and sprinkle with cinnamon sugar. Cut the dough into 6 long strips and cut each strip into 5 more pieces. Fold each piece in half.
STEP 11
Rectangular bread baking pan measuring 30cm*10cm. fry with vegetable oil. Place the pieces folded in half into the mold, alternating their folds first up, then down, up again, and so on. Leave the assembled sweet bread to proof for 15-20 minutes, covering with a towel so that the dough does not dry out. At this time, set the oven to preheat at 175°C.
STEP 12
After the specified time, place the pan with bread in the oven and bake for 30 minutes. Remember that the duration and temperature of baking depends on the temperature and design of your oven.
STEP 13
Prepare the glaze. Sift powdered sugar into a bowl, add orange juice, stir. You can use filtered water instead of orange juice.
STEP 14
When the sweet bread is ready, remove it from the oven, let it rest in the pan for about 10 minutes, then remove it, place it on a plate, and pour the glaze on top.
