    Rinse the rice thoroughly until the water runs clear. Cover the rice with water and leave while you prepare the dried fruit. Place the rice in a sieve before adding to the pan.

    Wash all dried fruits. Pour hot water over dried apricots and prunes and leave to swell for 5-7 minutes. Dried fruits do not need to be filled with water - frying and stewing time is enough for them to become soft.
