STEP 1
How to make sweet snail buns with cinnamon and sugar? Prepare your food. First for the test. Choose the best quality butter, without vegetable additives, that complies with GOST. Remove the egg from the refrigerator in advance, it should warm up. If you did not have time to do this, then keep it in warm water for a while. Milk of any fat content is suitable, yeast is fast-acting.
STEP 2
Take a large bowl and sift the flour into it. It is important to sift the flour to saturate it with oxygen. Then the baked goods will turn out airy and rise well during baking. Don’t add it all at once, start with 2/3 of the total volume, and add the rest as you knead the dough, if necessary.
STEP 3
Add sugar and yeast to flour. Beat in the egg. Be sure to wash your eggs before using them, as even seemingly clean shells can harbor harmful bacteria. It is best to use food grade detergents and a brush. Mix the ingredients. Heat the milk to a temperature of about 40 degrees, no more - a hot environment will kill live yeast. Melt the butter in any convenient way and cool until warm.
STEP 4
Gradually pour in warm milk and begin kneading the dough. After the milk, pour the melted butter into the bowl. Continue kneading with your hands. By adding oil, the dough will very quickly become homogeneous and come together into a ball. If it is too sticky, add more flour. I didn’t need to add, it took about 500 g in total. Cover the bowl with the dough and put it in a warm place for an hour and a half to proof.
STEP 5
In the meantime, prepare the ingredients for the filling. Also take the best and highest quality butter, melt it in any way. Read how to do this at the end of the recipe. You can use white or brown sugar, whichever you prefer. I have a reed one. Also adjust the amount of cinnamon according to your taste.
STEP 6
Mix cinnamon with sugar.
STEP 7
The dough should double in size in an hour and a half. Divide it into two parts, this will make it easier to work with.
STEP 8
Roll each part into a rectangular layer about 1 cm thick. If necessary, sprinkle the work surface with flour to prevent the dough from sticking.
STEP 9
Using a pastry brush, brush the dough with melted butter. Sprinkle it evenly with the cinnamon sugar mixture.
STEP 10
Roll the layer into a tight roll along the long side. Cut it into equal pieces 3-4 cm wide. I got 12 pieces from each half.
STEP 11
Cover a baking tray with baking paper and place the buns on it. Leave some space between them as the buns will grow in size. Cover the baking sheet with a towel and leave to proof for 30 minutes.
STEP 12
Preheat the oven to 190°C. Bake the buns for 12-15 minutes until golden brown. Keep in mind that everyone's oven is different. Cooking temperatures and times may differ from those indicated in the recipe. Focus on your technique. Remove the finished buns and cool slightly.
STEP 13
Prepare the curd filling. You can take soft cottage cheese or any curd cheese for her. I used ricotta.
STEP 14
Mix cheese (or cottage cheese) with powdered sugar and vanilla. Put just a little vanilla on the tip of a knife; in large quantities vanillin starts to taste bitter.
STEP 15
Grease warm buns with curd mixture. You can make buns without it, however you like.
