Stuffed zucchini rolls with cheese and garlic

STEP 1

How to make stuffed zucchini rolls with cheese and garlic? Prepare your food. Take the zucchini that is young, smooth, with intact skin and no signs of spoilage. If the zucchini does not meet these requirements, it is better to discard it. Wash the zucchini and dry. Also wash and dry the greens.
STEP 2

Cut the zucchini lengthwise into thin slices. This can be done manually or using a special burner grater. With its help, the slices will be smooth and of the same thickness. Just be very careful, these graters have sharp blades.
STEP 3

Pour vegetable oil into a frying pan and heat it well over medium heat so that the zucchini does not stick to the bottom. Place the zucchini slices in the hot oil so that they lie loosely. Fry for literally 1-2 minutes on each side. Don't fry them too long; they will become soft and tear when twisted. STEP 4

Place the fried zucchini on sheets of paper towel to remove excess oil that they have absorbed. Lay them out in one layer.
STEP 5

Place soft cheese and chopped herbs (I used dill) in a bowl. Almost any type of soft cheese is suitable for these rolls. This could be Sirtaki, Feta and even blue cheeses. Instead of dill, you can put parsley, cilantro or tarragon. It all depends on your preference and taste.
STEP 6

Peel and finely grate the garlic, add to the bowl with the cheese. Adjust the amount of garlic to your taste, as garlic cloves can vary in size and degree of spiciness.
STEP 7

Add mayonnaise. Do not add the entire amount of mayonnaise at once, as the cheese is different and you may need less or more. The main thing is that the filling is thick. You can make your own mayonnaise. Below the steps you will find a link to a catalog of homemade mayonnaise recipes.
STEP 8

Mix everything well and add salt to the filling if necessary. I didn’t add salt, the cheese and mayonnaise had enough for me.
STEP 9

Take one fried zucchini slice and place a teaspoon of filling on the wide edge. Roll the zucchini into a roll from the wide edge to the narrow one.
STEP 10

Do this for all the rolls.
STEP 11

Place stuffed zucchini rolls with cheese and garlic on a plate, add herbs and fresh vegetables and serve. To prevent the rolls from unrolling, you can pierce them with special skewers for canapés or just toothpicks.
