  1. STEP 1

    STEP 1

How to make stuffed zucchini rolls with cheese and garlic? Prepare your food. Take the zucchini that is young, smooth, with intact skin and no signs of spoilage. If the zucchini does not meet these requirements, it is better to discard it. Wash the zucchini and dry. Also wash and dry the greens.

  2. STEP 2

    STEP 2

Cut the zucchini lengthwise into thin slices. This can be done manually or using a special burner grater. With its help, the slices will be smooth and of the same thickness. Just be very careful, these graters have sharp blades.

  3. STEP 3

    STEP 3

Pour vegetable oil into a frying pan and heat it well over medium heat so that the zucchini does not stick to the bottom. Place the zucchini slices in the hot oil so that they lie loosely. Fry for literally 1-2 minutes on each side. Don't fry them too long; they will become soft and tear when twisted. For instructions on choosing a frying pan and oil for frying, see the links at the end of this recipe.

  4. STEP 4

    STEP 4

Place the fried zucchini on sheets of paper towel to remove excess oil that they have absorbed. Lay them out in one layer.

  5. STEP 5

    STEP 5

Place soft cheese and chopped herbs (I used dill) in a bowl. Almost any type of soft cheese is suitable for these rolls. This could be Sirtaki, Feta and even blue cheeses. Instead of dill, you can put parsley, cilantro or tarragon. It all depends on your preference and taste.

  6. STEP 6

    STEP 6

Peel and finely grate the garlic, add to the bowl with the cheese. Adjust the amount of garlic to your taste, as garlic cloves can vary in size and degree of spiciness.

  7. STEP 7

    STEP 7

Add mayonnaise. Do not add the entire amount of mayonnaise at once, as the cheese is different and you may need less or more. The main thing is that the filling is thick. You can make your own mayonnaise. Below the steps you will find a link to a catalog of homemade mayonnaise recipes.

  8. STEP 8

    STEP 8

Mix everything well and add salt to the filling if necessary. I didn’t add salt, the cheese and mayonnaise had enough for me.

  9. STEP 9

    STEP 9

Take one fried zucchini slice and place a teaspoon of filling on the wide edge. Roll the zucchini into a roll from the wide edge to the narrow one.

  10. STEP 10

    STEP 10

Do this for all the rolls.

  11. STEP 11

    STEP 11

Place stuffed zucchini rolls with cheese and garlic on a plate, add herbs and fresh vegetables and serve. To prevent the rolls from unrolling, you can pierce them with special skewers for canapés or just toothpicks.

  12. STEP 12

    STEP 12

    Bon appetit!

During the season, I always fry zucchini and serve it in the form of towers with mayonnaise sauce and tomatoes. I replace mayonnaise with natural yogurt. And thank you very much for the idea of rolls. Very beautiful presentation.

I made stuffed zucchini rolls with cheese and garlic. A very tasty appetizer, worthy of being on the holiday table! I just made rolls for dinner. I washed the zucchini well, dried it and cut it into slices with a thin knife. I took the middle part of the fruit so that the rolls turned out the same. I fried the plates in a grill pan so that beautiful stripes appeared, and less oil was used. For the filling, I beat regular fat cottage cheese and mayonnaise in a blender. My garlic is fresh, fragrant, I chopped it finely by hand. I also added a piece of tomato for taste. Zucchini slices roll easily, the main thing is not to fry them for too long. Great snack!

For the first time I decided to cook something from zucchini, usually all dishes with them are quite complicated, they require a lot of time, so I don’t even bother, there was a zucchini brought by my mother. And I really liked your rolls - you don’t need a lot of time, there are a minimum of ingredients and they are the simplest)) I decided to cook them! It turns out that zucchini goes very well with cheese; the garlic added some piquancy to the dish. My family ate everything instantly)) Very fast, satisfying and healthy
