If you want more juiciness, add more tomatoes. Any greens can be used. I have basil and parsley. Onions can be either purple or regular onions.

    Wash the tomatoes and zucchini. My zucchini is young with soft skin. Chop the zucchini and tomatoes. Peel the onion, rinse and finely chop.

    Heat the frying pan until hot and pour in a little vegetable oil. Add the chopped onion and fry it for a minute.

    Then add the prepared zucchini and tomatoes to the pan along with the onions. Simmer everything together for about 10 minutes. The simmering time can be slightly changed to your taste, depending on how soft the zucchini you want to get. I like them to be fairly soft but not fall apart yet. Young zucchini cooks very quickly.

    During stewing, a sufficient amount of juice will appear from the vegetables. At the end of the stew, add chopped fresh herbs and garlic, passed through a press. Stir and remove the pan from the heat.

I cooked stewed zucchini with tomatoes and garlic in a frying pan for dinner. It turned out fast, easy and delicious! I peeled the zucchini and cut it into medium pieces just like the tomatoes. I had regular onions, not purple. I used parsley from the greens, I like it better. Finely chopped the onion and fried it in a frying pan until golden brown. Then I added zucchini and tomatoes. I added salt and pepper. Stir and simmer together until the vegetables are ready. At the end I added chopped garlic and parsley. The juiciness of the vegetables and the aroma of garlic made the dish very tasty! Thanks to Yulia M. for the delicious idea and I recommend making it!

I made zucchini according to your recipe. I spent about 40 minutes on everything, but I didn’t cut the zucchini into cubes or peel the seeds - they are young and small. That's why I got a few of them, but a lot of carrots and onions, but still tasty. Thanks for the recipe!
