STEP 1
How to fry squid with cheese stuffed in a frying pan in Greek style? To begin, prepare the necessary ingredients according to the list. You can replace bell peppers with fresh or sun-dried tomatoes. You can supplement the filling with other ingredients to your taste, for example, olives, black olives.
STEP 2
Peel the squid from the skin, internal films, remove the chitinous plate and entrails. Rinse thoroughly. If the squids are frozen, defrost them first, but not completely - frozen squids are easier to clean. I have whole squids, with tails. But you can also buy already prepared, cleaned, frozen tubes without tails. They will just need to be defrosted.
STEP 3
Peel the bell pepper from seeds and stems and cut into small cubes. To make the dish more beautiful, you can use peppers of different colors, for example, red and yellow.
STEP 4
Crumble the ricotta with your hands. You can replace the ricotta with any other cheese to your taste: regular Russian, mozzarella, suluguni, feta, feta cheese, cottage cheese or processed cheese.
STEP 5
Wash the dill and parsley, dry and finely chop. If you wish, you can replace or supplement with other herbs, such as green onions, cilantro, or use a mixture of different herbs.
STEP 6
In a bowl, combine ricotta, bell pepper, chopped herbs, pressed garlic cloves, salt and ground black pepper. Mix everything thoroughly.
STEP 7
Stuff the squid carcasses tightly with the prepared cheese-vegetable mixture and pin them together with toothpicks so that the filling does not leak out during frying. If you have some filling left, you can make another squid. If you don’t have squid, you can make puff pastries with it or stuff tomatoes and bake in the oven.
STEP 8
Heat vegetable oil in a frying pan over medium heat. Place the squid carcasses and fry for about 1-2 minutes on each side until golden brown. You shouldn’t fry it longer to prevent the squid from becoming rubbery.
STEP 9
Transfer the finished squid to a plate and serve, garnished with fresh herbs. Bon appetit!
